Creamy Italian Chicken

I have actually made this recipe once before and neither my husband nor I really liked it. However, I decided to make it again with some modifications and it turned out quite nice. I used a can of Progresso vegtable classics creamy mushroom soup, 1/3 of the cream cheese (as the first time it was unbearable), added some onion powder, parsley, fresh black pepper, and a little parm on top. I used two frozen chicken breasts and just watched it. I served it over egg noodles and some boiled potatoes.

Braised Balsamic Chicken

I decided to make this recipe, because I wanted to mix things up a bit. I am not a big fan of vinegar anything (normally), but wanted to make it as I thought my husband would like it. We BOTH loved it. I did change somethings after reading other people's reviews. I mixed a little less than 3/4 a cup of the balsamic vinegar with a cup of chicken broth and about 3 tablespoons of brown sugar and only a fraction of the seasonings called for and set aside. Then I browned the onions and once those were ready I added 2 teaspoons of fresh minced garlic then added the chicken to brown. Then I just added a can of diced tomatos and brought it to a boil and then ccovered and simmered it until it was done. This was different and very tasty. I even loved the chicken reheated!

Potato Salmon Patties

I love salmon patties but I decided to try the recipe a little different and it was delicious! Instead of the dill weed and celery salt, I added some old bay seasoning and some chopped fresh chives. I also added a small amount of lemon juice and cheddar cheese. These were excellent :))

Glazed Meatloaf II

I usually make a different meatloaf recipe but decided to give this one a shot, and I'm glad I did! My fiance said it was awesome, and he loved the topping. The only thing I did differently was to use bread crumbs in the place of slices of bread. Yummy!

Taco Pie

I'm only giving this 3 stars because I didn't much care for the bread bottom. I added black beans and corn. Cooked some garlic and japs. in the meat mixture too. It was still tasty even though it wasn't my cup of tea.

Slow Cooker Chicken and Dumplings

Spinach Stuffed Chicken Breast

My fiance and I both loved this recipe. I did make some changes based on other's reviews and based on our preferences. I cooked the spinach in the bacon grease as suggested, and added about 3 large cloves of garlic. We love garlic! I omitted the sour cream, simply because we didn't have any. I also used mozzerella instead of pepperjack cheese. Once everything was ready to go, I topped the chicken with parm and baked. It was delicious!

Chicken Quesadillas

I like this recipe however, I feel it needs a little more to give it that umph. I like to make a larger version using left over grilled chicken breasts. I add half a can of black beans and half a can of corn to the cut up chicken. Other than that I follow the same directions, and top it off with some hot sauce. Very tasty.

Spanish Rice II

I've made many spanish rice recipes in the hopes of finding one that truely tasted like spanish rice, and this is that recipe! I followed some other people's advice by adding chicken broth instead of water, adding a generous teaspoon of cumin, and one diced up jalapeno. In addition I rinsed the rice well and let dry before I browned it with the other ingredients, though this is not included in the original directions. I've only begun washing my rice before cooking when I tried this recipe. I read on a lot of reviews that it was necessary and boy were they right! I will never use another spanish rice recipe.....ever!
