Baked Mac and Cheese for One
Oh my goodness. I am glad I was alone the night I made this because I was licking the bowl. I had some shells left over from another recipe and was looking for a good way to get rid of them. The ONLY thing is there is too much sauce and not enough noodle, so the recipe should be tweaked. I ended up doing 8 tbsp raw shells instead of the 3 suggested. But with 8 tbsp noodles and the rest of ingredients as is, it is PERFECT. So delicious!!! For gluten free: do gluten free noodles, substitute flour for GF Bisquick and leave out breadcrumbs all together.

Mexican Pizza I
This is AMAZING. My husband said "This could replace taco night. Forever". I did make some changes, however based on a few other reviews as well as to lower the calories. To get it from 770 calories down to 447 calories, 19g fat, 37 carbs, 34g protein: -drop the avocado (I love avocado, but I couldn't really taste it with all the other yummy goodness) -sub ground turkey for ground beef -change the recipe from serves 4 to serves 6 (there is really so much "stuff", it should be spread out over 6 plates, not 4. -6 tbsp light sour cream (instead of 8) -Change # of tortillas from 6 to 12 (see below) Directions: Follow instructions 1, 2, 3 & most of 4. 4. Arrange 6 of the tortillas on the cookie sheet. 5. Divide the refried beans amongst the 6 tortillas and spread. Divide the meat amongst the 6 tortillas and spread. Top with another tortilla. Divide the 8oz bag of cheese across the top of the tortillas. 6. Bake for 10 minutes. Garnish as mentioned in the real instructions (minus the avocado) 447 calories, reheats very well. Very filling!

Amazing 'Pizza' Pork Chops
Great! It was like an explosion of fresh flavors! My husband doesn't like pork chops and loved this! I do not own a grill so I baked this in a covered dish for 30 minutes at 350*F. I put the cheese on and baked for 3 minutes more, uncovered. So easy!
