Mexican Pizza I
This is AMAZING. My husband said "This could replace taco night. Forever". I did make some changes, however based on a few other reviews as well as to lower the calories.
To get it from 770 calories down to
447 calories, 19g fat, 37 carbs, 34g protein:
-drop the avocado (I love avocado, but I couldn't really taste it with all the other yummy goodness)
-sub ground turkey for ground beef
-change the recipe from serves 4 to serves 6 (there is really so much "stuff", it should be spread out over 6 plates, not 4.
-6 tbsp light sour cream (instead of 8)
-Change # of tortillas from 6 to 12 (see below)
Directions: Follow instructions 1, 2, 3 & most of 4.
4. Arrange 6 of the tortillas on the cookie sheet.
5. Divide the refried beans amongst the 6 tortillas and spread. Divide the meat amongst the 6 tortillas and spread. Top with another tortilla. Divide the 8oz bag of cheese across the top of the tortillas.
6. Bake for 10 minutes. Garnish as mentioned in the real instructions (minus the avocado)
447 calories, reheats very well. Very filling!
