Im a college student with a love for baking! If i'm not hitting the books I try to find time to whip up some tasty treats, which usually get gobbled up in minutes by hungry students following the scent to the building's kitchen.

My cooking tragedies
My freshman year in high school when I spent hours making my mom a beautiful dark chocolate cake with mint chocolate ganache. I was hours in and freshly sunburnt from the day at the beach then right as I finished the ganache and was about to pour it on the cake I dropped bowl and it went all over the kitchen.

Strawberry Marshmallow Frosting
Probably the most delishous cupcake topper ever!!! So much better than basic frosting! Love the bold strawberry flavor (I bet it would be great with any jello flavor). It was super easy to make, even though I messed up a little by adding the jello mix to the sugar and boiling it. I just boiled the mixture till it bubbled and wasn't too concerned on it being thready. So simple but tastes sooo good! I used it to top angel food cupcakes and it looked professional and so yummy! Looks great alone or with sprinkles and other toppers. Easy to spread with a knife or pipe (tried both). It holds its shape when you spread it leaving a perfect swirl at the top. I can't say enough great things about it, will definitely keep and make again! Thanks so much for posting it! **UPDATE** I made this again last night with raspberry jello and it was just as awesome! I put it on chocolate angel food cupcakes and it looked perfect. I prefer the strawberry flavor but others liked the raspberry.

Red Velvet Cake I
The BEST red velvet cake! I made this cake using the substitutions everyone had suggested (3 tbl cocoa powder instead of 2 tbls, 1 oz red food coloring not 2 oz, 1 cup oil for 1/2 cup shortening, 2 cups white sugar not 1 1/2 cups, and a tablespoon white vinegar). I did not make the frosting, so I can't rate that, but the cake is amazing! Rich, moist with the perfect combination of vanilla and cocoa as a proper red velvet should. I made this with red, white, and blue fondant for the 4th of July and it was a total hit at the bbq. This recipe is a keeper!

Marshmallow Fondant
Really easy to make especially it being my first time with fondant! I also used shortening in place of butter, as well as clear vanilla extract to achieve a whiter fondant. If you wanted a crisp white I suggest using a while gel. However, I took off a star for taste. It doesn't taste as great as the reviews say. As all fondants are, its there for looks more than taste. Everyone peeled it off before eating the cake. It's not like candy like some reviews say. It just tastes like a gummy ball of confectioners suger. It held up well in the heat and humidity at the bbq. Would use again.
