This was delicious, but it would have been way oversweet with cream of coconut. I used one can of coconut milk, and it was perfect. I also used one cup of rum and no water. This may be a new Christmas Eve tradition. Thanks!

Onion Meat Loaf

I was excited to try meatloaf in the slow cooker, but this recipe wasn't for me. The ketchup flavor was too strong, and it crumbled apart even though I let it rest for a while before slicing. I might try again with my own changes.

Spicy Bean with Bacon Soup

Used fresh minced garlic instead of garlic powder and added cilantro and salt 15 minutes before serving. Otherwise made as directed and really enjoyed this soup.

Slow Cooker Chicken Stroganoff

I forgot to start this until late afternoon, so I cooked it on high for 1.5 hours and then 2 hours on low. I used "zesty" Italian dressing mix, reduced-fat cream of chicken soup, 4 oz. cream cheese, and about 1/4 cup sour cream. I'll make this again with these minor changes, but next time I'll use reduced-sodium soup to cut down on the saltiness. Thanks for the recipe!

Cornbread I

Holy smoke, this is good. True southern cornbread like I grew up with. I doubled the recipe and baked for 23 minutes in my 10-inch iron skillet. I did come back to change my rating to 4 instead of 5 stars because it really is too salty. At first I thought I liked it, but next time I'll try cutting the salt in half. Otherwise a great recipe!

Chuck's Favorite Mac and Cheese

This didn't knock my socks off like other reviewers, but I thought it was pretty good and super easy. It was nice to just stir everything together and not spend time making a bechamel sauce like my usual recipe. I would make this again, especially for a crowd.

Olive Oil Cranberry Bundt Cake

This cake is really moist and delicious. I basically followed the recipe, making only a couple tiny changes based on what I had on hand (subbed 1/4 cup of canola oil for olive oil, used less cloves and added ginger, used milk+lemon juice since I didn't have buttermilk, and left the cranberries whole). I don't think any of these small changes were necessary -- the recipe is great. This one is a keeper!

Berdean's Cube Steak

I made this in my iron skillet, and it turned out well. I used less oil than called for and beef broth instead of water and bouillon, but otherwise followed the recipe. (I guess I also seasoned the meat with more than salt and pepper...) The gravy is thin, but flavorful and the meat is fork tender. Would definitely make again!

Creamed Spinach Casserole

This was tasty, and I'm glad to have a new veggie side dish in my arsenal. I reduced the butter to 2 tbsp in the casserole and still used 1 tbsp with the bread crumbs. I also used 2% milk cheddar. Otherwise I followed the directions exactly, and it turned out great. Not at all watery, very crispy topping, yum!

Herb Rubbed Sirloin Tip Roast

Spices were a little strong, but that may be because I used a smaller roast. The flavor was great, and it was cooked to perfection. I took it out at 140 degrees, and it was medium, juicy, delicious. Thanks!

Bow Tie Lemon Chicken

I thought the flavor was good, but I didn't really measure the seasonings so I probably used more than the recipe called for. I did think the sauce was too thin. Next time I'll combine 1 T butter and 1 T flour before adding the chicken broth to thicken it up a bit. Otherwise yummy!

Layered Chicken and Black Bean Enchilada Casserole

This recipe took a little too long for a weeknight dinner, but it was definitely worth the wait. So, so good. My husband and I both had seconds, and I can't wait to eat more for lunch tomorrow! I made really minor changes like extra spices on the chicken, fresh jalapeno instead of canned chiles, and reduced-fat cheese and sour cream. I'm sure that the recipe is perfect exactly as written.

Italian Sausage Soup

I thought this soup was good but not outstanding. I added an extra can of beef broth as others suggested, but I think I would have liked it a little better as written. The soup is colorful and gorgeous, but I probably won't make it again.

MMMMM... Brownies

Really easy and delicious! I would definitely make these over box brownies in the future. My husband would have liked them a little chewier, but I think I could achieve that with a little longer baking time. Thanks for the great recipe!
