Country Apple Dumplings

Incredible! This is one recipe that I can honestl;y say does not require ANY tweaking! It tasted like I spent hours on these puppies, when it only took about 5-10 minutes of "real work"...I served the dumplings on top of a couple scoops of real vanilla ice cream...yummy! Can't wait to make again!

Lemon Cream Cheese Frosting

I'll start out by saying that this frosting has a wonderful flavor- but- it is entirely too runny to work with if you're trying to pipe with it or even use a pastry tube to decorate cupcakes. I had to use so much sugar to get to even an acceptable consistency. I would recommend this frosting if you just want a simple (non-decorative) frosting, otherwise- look for something thicker.

Chicken Noodle Soup

I have been using this same recipe for a couple years now, and I finally decided to rate it. It is THE BEST chicken noodle soup- even my boyfriend (who is not a huge soup fan) LOVES this! I follow this recipe ingredient by ingredient...the only modification I've done is add mushrooms on occasion. It's so easy. The marjoram gives it such a "grandmaish" flavor-- which is what we all want from our chicken noodle soup!!!

Shrimp Jambalaya

This is a great "base" for a great jambalaya...I modified it quite a bit- I got rid of the celery and peas completely. I added about 5 strips of thick cut bacon (chopped) and fried that with the veggies in the beginning...after the bacon was just about cooked I threw in the rice and let the rice fry on it's own for a bit. I then added the remaining ingredients. Being a fan of spicy food, 1/8 tsp. of cayenne just wasn't enough, I did more like 1/4 teaspoon. I also (like almost everyone else) decided to use chicken broth instead of vegetable broth. I don't like overcooked shrimp, so I used raw shrimp...I have a feeling that cooking already cooked shrimp would make them rubbery. Anyhow, the dish turned out fantastic! I will be making this again!
