Healthy Pumpkin Cranberry Muffins

This will be my staple pumpkin recipe from now on. Like others have said it doesn't seem like a "healthy" recipe. The ginger does add a unique flavour - it makes you stop and think - what's different about this muffin? But it is not overwhelming and I wouldn't change it. I have used both fresh and dried cranberries - made it twice in the past week and a double batch the second time because it is such a great seasonal recipe- but I actually prefer the dried cranberries.

Old Settlers' Baked Beans

The perfect baked bean recipe! The kids ate seconds and my husband loved it. This will be "the" one from now on. So easy to prepare. Like most, I substituted molasses for the white sugar. I skimped on the bacon (didn't have much on hand) and was also short a can of pork and beans but it was still terrific!

Turkey and Quinoa Meatloaf

Wow! I am amazed - A dish with quinoa that my husband said about: "you can make this again!" He didn't even notice there was quinoa until my son told him after! The flavour was incredible. I made it with ground chicken (forgot that it was not turkey I had on hand), and used Wyko's recipe for the sauce, which my husband said "made it", so use this instead of the one with the recipe: 1/4 c brown sugar, 1/4 c ketchup, 1 tbsp regular mustard, and a few drops of Worcestershire sauce. And I only used 3/4 of the hot sauce called for, and it definitely had enough zing and flavour. A keeper!

Italian BBQ Pork Chops

Great recipe! I love balsamic vinegar and this does not disappoint. I marinated the chops in about 1/4 of the sauce while I cooked the rest of the sauce and meal. very tender and yummy!

Grilled Pork Loin Chops

It is a bit different but more tasty than you might think. We had it with pasta but mashed potatoes would have been better. I found the sauce more than what was needed (I did 4x the recipe for 9 chops).

Zesty Quinoa Salad

This was an excellent choice for my staff potluck, lots of great reviews and very little left over! I was worried about the amount of cumin and oil based on other reviews but followed the recipe and found the flavour perfectly balanced. After sitting overnight it helped flavours meld better, but was a bit drier than I wanted so I gave it another squirt of lime juice and olive oil and it was fine. I added edamame which was a great addition. Next time will add avocado also. A keeper!

Teriyaki Chicken Wings

I'm surprised more reviewers didn't mention how sweet these are. I used only 1/2 the sugar and they were still almost too sweet. I also switched the amounts of water and pineapple juice as juice as did many reviewers, so I suppose that added to the sweetness too.. The end product was great and went over well but not as good as the restaurant style buffalo wings I made from this site also. Would make again, but also increase garlic and ginger too next time.

Italian Breaded Pork Chops

I would make this again. I covered the meat in flour first, followed the rest of the directions except i added garlic powder to the bread crumbs (Panko with italian seasoning) and didn't do the frying step- just baked it for 30 minutes. It was not as flavourful as we had hoped, we added a smidge of salt at the table and it was enjoyable.

Scalloped Potatoes II

I found my "keeper" scalloped potato recipe finally- but it wasn't the original recipe, it was 072705r's adaptation - it was perfect. It was thick, creamy, with great flavour- and all easy to make from scratch! made another recipe that used canned soup but am so glad I found this review instead.

Coconut-Lime Cheesecake with Mango Coulis

This recipe was incredible! I took it to a dietitian's potluck and received many compliments (yes we eat cheesecake too!) I substituted graham crumbs with 1 tsp ginger and the crust was great. The cheesecake isn't very high, but good for keeping portions moderate. I may or may not do the mango coulis next time, I liked it but the cheesecake is great on its own. I did follow another reviewer's suggestion to top with toasted coconut and slices of lime on each piece. It looked as good as it tasted!

Crumbly Lemon Bundt Cake with Glaze

I thought 2 1/3 cups of sugar seemed like a huge amount, so I cut it down to 1 cup. I also used only 3/4 of the oil. I wanted to do half applesauce, half oil but realized I didn't have applesauce. Despite these changes it still worked out well. It was plenty sweet enough especially with the glaze. I didnt have lemon extract but substituted lemon zest, about 2 Tbsp. The texture seemed a little dense , probably due to these changes, but it was still worth serving to company.

Asian Pork Tenderloin

The flavor was awesome! Like another reviewer, I did it in the slow cooker as I wasn't coming home right after work today. It was on low for 11 hours and the meat was so tender it came apart in chunks with a fork piercing. Served it with rice and poured the extra liquid over top. I also added fresh grated ginger, and was glad I did.

Easter Grass Slaw

I have finally found my go-to coleslaw with this recipe! My husband didn't like most of the others I tried but said this one's almost as good as his mom's! I don't always have all the ingredients but it's still always good! Try cranberries or oranges. Sometimes I cut back on the sugar and use partly artificial sweetener.

Grilled Salmon I

This is one of the best salmon recipes I have had. My familyn isn't big on fish but they ate this one up! I let it marinate for 4-5 hours and did use the foil wrap method to keep the grill clean. This one's a keeper!

Fresh Pear Cake

I got rave reviews on this from my guests! It was still moist when served the next day and had great flavour. the spice level was perfect and made it better than the average cake. I made the following changes: only used 1 cup sugar ( it was plenty sweet, esp with ice cream and salted caramel sauce from this website). I also subbed ginger for the nutmeg, used 2 whole eggs instead of egg white, and subbed half the oil for applesauce. Next time I will try grating the pear, but I didn't mind the chunks either. A very versatile recipe! I think I will go have another piece now...

Salted Caramel Sauce

I highly recommend watching the video before making this. Even for experienced cooks this was a little tricky. I ended up just slightly burning the sauce, and some of the sugar clumped together. Despite all this the taste was still very good. After watching the video I realized what I had done wrong - not letting all the chunks dissolve completely before stopping stirring. Also the recipe is a bit off for the timing of here 3-8 minutes. I let mine sit un stirred for 3 minutes and came close to burning It. However, it was a fast easy recipe for a delicious sauce, so I will try it again and hopefully it will be even better!

Asian Glazed Chicken Thighs

I made two double batches of sauce for a double recipe of chicken. The first one was for marinade and we used apple cider vinegar because I was out of rice vinegar. We put all the marinade with the chicken thighs in a 9x 13 pan and baked as per directions. The second double batch I used rice vinegar ( after buying some) and coked it on the stove, and added a couple of Tbsp cornstarch and it thickened up nicely. The first marinade was tasty and sweet, I am sure the chicken juices helped also. The second marinade looked better and had a better texture but tasted a bit vinegary. Maybe I didn't cook it long enough? I didn't find either one spicy. Sweet and sour were the main flavours. Next time I will follow the reviewers suggestions who said not to do a double batch of sauce, but will cook the chicken alone, add the marinade to the other half of the sauce and then thicken it. I will also use at least half apple cider vinegar.

Fish Chowder

I made this without clam juice or old bay seasoning, and we loved it! I did add garlic cloves, about 2, as well as dill and a quick shake of Tabasco to add flavour. I included carrots and corn because I like a very hearty soup and used our local whitefish. A good basic recipe that adapts to your preferences well!

Baked Ham with Sweet Glaze

This was both easy and delicious! I had to add about 3 Tbsp water to the paste because it was so dry (I think my honey was a bit "old"). I scored the ham before cooking and added the glaze half hour before as per directions, basting once. I didn't use pineapple and cherries, it was plenty sweet enough as it was. They would look pretty but I was cooking for a bunch of men so that didn't matter as much. They loved it!
