Bacon Chicken and Dumplings

Reviewed: Sep. 7, 2014
I couldn't imagine a better stew! I did not use the dumpling part of the recipe, instead I made Chef John's dumplings from this site. I added a clove or two of garlic, and some celery (added with the onions) and carrots. I also thickened it with some cornstarch / milk mixture, and in fact used mostly 1% milk not cream. I like more of a stew than a soup texture. One tip, my stew filled the pot and I think the dumplings would have been fluffier if there was more room for them to expand. So make sure to have lots of room in your pot! A definite keeper!

Jay's Signature Pizza Crust

Reviewed: Sep. 1, 2014
I made this two nights in a row. The first night I used my kitchen aid dough kneader and it turned out "ok". The second night I followed the video and directions exactly and I loved the result! One change- I used about 1/3 c whole wheat flour. Next time I will increase the ww flour ratio. I also learned how to use a pizza stone - it is important to heat the stone for 10 min at a preheated temp of about 400, and also to generously flour the stone before putting the dough on. This made it exceptional!

Lana's Sweet and Sour Meatballs

Reviewed: Jul. 22, 2014
Great recipe- easy to make and delicious- my whole family loved it and are excited for leftovers tomorrow! Followed the sauce part closely (I never add all the salt, maybe 1/4 of what recipe recommends and I used regular salt, and probably only 2-3x the cornstarch). I did 4x the sauce as I had a lot of meatballs (probably double this recipe, homemade ones in the freezer, Meatball Nirvana recipe from AR). I came home at lunch, quickly mixed up the sauce ingredients and poured them over the frozen meatballs in a slow cooker, on medium heat for 4 -5 hours. Some meatballs mushed into meat sauce but most held their shape. I am sure storebought ones would hold up better, but these tasted better!! This will become my go-to sweet and sour recipe!

Aunt Norma's Rhubarb Muffins

Reviewed: Jul. 19, 2014
I can't imagine a better rhubarb muffin recipe. They have wonderful texture, not too much oil, and great taste. The streusel really makes it. Follow recipe exactly (though I used milk with vinegar to replace buttermilk). No need to change anything!

Asian Grilled Chicken

Reviewed: Jul. 14, 2014
My family liked this, and my husband complimented me on it, but I didn't think it was the "wow!" others did. It is easy to put together. I followed the recipe except I used breasts instead of thighs, and added a cornstarch / water mixture to the sauce to thicken it. An easy weeknight meal, will probably make again for that reason.

Quick Edamame Salad

Reviewed: May 31, 2014
Great salad! Thanks to other reviewers I went easy on the oil, used less than 3 Tbsp and it seemed just right. Also used fresh garlic instead of powder, added about 1 tsp oregano and omitted parsley because I don't care for it. It is even better the next day!

Carrot Cake III

Reviewed: Apr. 20, 2014
This is possibly the best carrot cake recipe I have found to date. Moist and delicious, and the icing is great too. I tried Sam's carrot cake recipe and it was good but this had more "wow!" to it despite fewer ingredients. I did a few changes recommended by others: 3/4 c oil and 1/2 c applesauce, 1 cup each white and brown sugar, and 1 extra tsp cinnamon and a dash of cloves, nutmeg and cardamom ( which I love in anything with cinnamon in it also). I also had to use 1 c wholewheat flour because I ran out of all purpose, and it had great texture. I will use this as my go-to recipe from now on!

Fresh Pear Cake

Reviewed: Mar. 8, 2014
I got rave reviews on this from my guests! It was still moist when served the next day and had great flavour. the spice level was perfect and made it better than the average cake. I made the following changes: only used 1 cup sugar ( it was plenty sweet, esp with ice cream and salted caramel sauce from this website). I also subbed ginger for the nutmeg, used 2 whole eggs instead of egg white, and subbed half the oil for applesauce. Next time I will try grating the pear, but I didn't mind the chunks either. A very versatile recipe! I think I will go have another piece now...

Salted Caramel Sauce

Reviewed: Mar. 8, 2014
I highly recommend watching the video before making this. Even for experienced cooks this was a little tricky. I ended up just slightly burning the sauce, and some of the sugar clumped together. Despite all this the taste was still very good. After watching the video I realized what I had done wrong - not letting all the chunks dissolve completely before stopping stirring. Also the recipe is a bit off for the timing of here 3-8 minutes. I let mine sit un stirred for 3 minutes and came close to burning It. However, it was a fast easy recipe for a delicious sauce, so I will try it again and hopefully it will be even better!

Asian Glazed Chicken Thighs

Reviewed: Mar. 5, 2014
I made two double batches of sauce for a double recipe of chicken. The first one was for marinade and we used apple cider vinegar because I was out of rice vinegar. We put all the marinade with the chicken thighs in a 9x 13 pan and baked as per directions. The second double batch I used rice vinegar ( after buying some) and coked it on the stove, and added a couple of Tbsp cornstarch and it thickened up nicely. The first marinade was tasty and sweet, I am sure the chicken juices helped also. The second marinade looked better and had a better texture but tasted a bit vinegary. Maybe I didn't cook it long enough? I didn't find either one spicy. Sweet and sour were the main flavours. Next time I will follow the reviewers suggestions who said not to do a double batch of sauce, but will cook the chicken alone, add the marinade to the other half of the sauce and then thicken it. I will also use at least half apple cider vinegar.

Zesty Quinoa Salad

Reviewed: Feb. 28, 2014
This was an excellent choice for my staff potluck, lots of great reviews and very little left over! I was worried about the amount of cumin and oil based on other reviews but followed the recipe and found the flavour perfectly balanced. After sitting overnight it helped flavours meld better, but was a bit drier than I wanted so I gave it another squirt of lime juice and olive oil and it was fine. I added edamame which was a great addition. Next time will add avocado also. A keeper!

Fish Chowder

Reviewed: Feb. 6, 2014
I made this without clam juice or old bay seasoning, and we loved it! I did add garlic cloves, about 2, as well as dill and a quick shake of Tabasco to add flavour. I included carrots and corn because I like a very hearty soup and used our local whitefish. A good basic recipe that adapts to your preferences well!

Teriyaki Chicken Wings

Reviewed: Feb. 3, 2014
I'm surprised more reviewers didn't mention how sweet these are. I used only 1/2 the sugar and they were still almost too sweet. I also switched the amounts of water and pineapple juice as juice as did many reviewers, so I suppose that added to the sweetness too.. The end product was great and went over well but not as good as the restaurant style buffalo wings I made from this site also. Would make again, but also increase garlic and ginger too next time.

Baked Ham with Sweet Glaze

Reviewed: Jan. 26, 2014
This was both easy and delicious! I had to add about 3 Tbsp water to the paste because it was so dry (I think my honey was a bit "old"). I scored the ham before cooking and added the glaze half hour before as per directions, basting once. I didn't use pineapple and cherries, it was plenty sweet enough as it was. They would look pretty but I was cooking for a bunch of men so that didn't matter as much. They loved it!

Italian Breaded Pork Chops

Reviewed: Nov. 17, 2013
I would make this again. I covered the meat in flour first, followed the rest of the directions except i added garlic powder to the bread crumbs (Panko with italian seasoning) and didn't do the frying step- just baked it for 30 minutes. It was not as flavourful as we had hoped, we added a smidge of salt at the table and it was enjoyable.

Scalloped Potatoes II

Reviewed: Oct. 27, 2013
I found my "keeper" scalloped potato recipe finally- but it wasn't the original recipe, it was 072705r's adaptation - it was perfect. It was thick, creamy, with great flavour- and all easy to make from scratch! made another recipe that used canned soup but am so glad I found this review instead.

Healthy Pumpkin Cranberry Muffins

Reviewed: Oct. 14, 2013
This will be my staple pumpkin recipe from now on. Like others have said it doesn't seem like a "healthy" recipe. The ginger does add a unique flavour - it makes you stop and think - what's different about this muffin? But it is not overwhelming and I wouldn't change it. I have used both fresh and dried cranberries - made it twice in the past week and a double batch the second time because it is such a great seasonal recipe- but I actually prefer the dried cranberries.

Turkey Pot Pie

Reviewed: Oct. 14, 2013
I used a homemade biscuit topping -Basic Biscuit recipe on this site -instead of the pie crust and it worked fine. I found it needs more flour than called for- it was more runny than I prefer for pot pie. The taste was good. I did add some garlic powder also

Garlic Chicken

Reviewed: Sep. 21, 2013
This recipe, as is,was nothing special. It was a stretch for me to dredge chicken in butter and definitely not worth it. Other than changing butter for oil, I made this as is. Oh, yes- I may have added Italian spices also.

Lentil Soup with Lemon

Reviewed: Sep. 19, 2013
As far as lentil soups go, this was Wow! Much better than expected. Definitely add lemon juice, cilantro and sour cream instead of oil, as another reviewer suggested. It tasted rich, flavourful, and was hearty. I might up the chili a bit next time. I added an extra garlic clove and used Epicure no salt chicken bouillon, otherwise followed the recipe exactly.
