Lemon Bars II

These bars are lemony perfection! I did sprinkle the topping ontop of the lemon filling the first time but actually prefer to not put it on. I just dusted the top w/ sifted confectioners sugar before serving.

Chocolate Cornstarch Pudding

This is a creamy and very chocolaty pudding. Way better than the boxed variety! Very simple too other than all the stirring but the time is so worth it in the end. I used a whisk to stir and used 3/4 cup sugar instead of 1/2c. b/c I like sweet puddings but it is not even as sweet as boxed pudding w/ the extra sugar. Delicious and my search for the best chocolate homemade pudding is over!

Easiest Teriyaki Marinade Ever

Delicious! I used boneless, skinless chicken breasts and marinated them 24 hours then grilled. The only changes I made were: used ginger instead of cinnamon and added a dash of pineapple juice to the marinade.

Caribbean Jerk Pork Chops

This marinade was very tasty. I used chicken and let it marinate overnight. I do agree w/ previous posters that is needs more "heat or spice" so I will make it again and double the cayenne powder.

Deep Dark Chocolate Cookies

These were "ok". I definately think you need to use Dutch cocoa powder b/c regular Hershey's just makes the cookie taste like cocoa powder and chocolate chips. After all the great reviews I was really disappointed that all I could taste was cocoa and nestle choc. chips. I may make them again w/ Dutch cocoa powder and decrease the choclate chips a bit.

Spicy Chile Casserole

Delicious! It looked kind of boring coming out of the oven but wow was it tasty! I only made a couple changes to work w/ what I had on hand. I omitted the small can of green chiles, used flour tortillas instead of corn and threw in a couple dashes of hot sauce. Kids won't eat it but husband will love this!

Mmm-Mmm Better Brownies

These are NOT your typical "cocoa" dry brownie w/ no chocolate taste. These brownies and delicious and very chocolaty. DH and the kids had NO idea they were homemade. I substituted the oil for melted butter and I added about 2 Tablespoons of Hershey's chocolate syrup and pecans. Perfectly moist, chewy and chocolaty!

Joey's Peanut Butter Cookies

Very peanut buttery and soft w/ a chewy middle. Dip the fork in water when making cross marks on top of the cookies. DH ate quite a few of these and that must mean the were delicious b/c he hates peanut butter!

Oh-So-Good Chicken

DH is in love w/ this recipe. He just can't get enough of it. I used left over baked chicken and tossed in a half can of black beans. I also sprinkled the top with a bit of cheese. Delicious!

Minnesota Golf Course Chili

Awsome chili! Even my DH raved about it and he isn't a big chili fan. It was the perfect grade of spicyness though it was TOO spicy for the kids. But the adults loved it! I used 2 cans pinto beans and one can of chili beans b/c that is what I had on hand and it worked great. Go easy on the salt though b/c the longer it sits, the more the salt comes out. I made this ahead of time and let it sit in the fridge for 2 days before we ate it and it was very flavorful.
