Creamy Rice Pudding

For years now I have been trying to find a good rice pudding recipe. This one is wonderful!!!! I work with a group of ladies for whom we prepare lunch once a week. One week we had basmati rice left over. We froze it, and then used this recipe the following week. They loved it, and it has become a favourite of many (myself especially)

Orange Sauce Chicken

I was looking for an orange sauce recipe, and this one came up in the search. I didn't follow the recipe for the chicken portion, but used the sauce portion and it was delicious. I have served it with salmon; rice; chicken; vegetables. Recipe makes a fairly large quantity, so did my husband and I for a few meals.

Lentil Soup III

I scaled this recipe for 40 people and used it in a Community Kitchen group (a bunch of people getting together to learn cooking skills). It was a big hit - and very delicious. Best part was that it's easy! Thanks!

Apple-Raisin French Toast Casserole

I help to plan and prepare lunch for a group of pregnant women. We look for recipes that are different and can easily be converted for the number of people we serve (sometimes 40 people). I converted this recipe to serve 40. When you are converting, you have to bear in mind that the system only converts the ingredient list - it does not convert prep time and Directions. It took me about 2 hours to prepare but wasn't difficult (just time consuming) Recipe Suggestion: When you cover the french toast with tin foil, be sure that the foil is not actually touching the toast or it will stick when you are cooking it. Or, alternatively you could oil or spray the tinfoil. The people that ate the toast that I prepared loved it. Most asked for the recipe. Many thanks to Justin.

Brown Sugar Meatloaf

I was having 20 for dinner last night, and wanted something that I could prepare a little ahead, but have cooking as people were arriving. This recipe fit the bill perfectly, and with 499 positive reviews, well.... I scaled the recipe for 24 people and put it into a much larger pan. The only thing discrepancy between the recipe and the actual preparation, would be that when scaled, you of course need to allow more prep. time, and the cooking time was longer because of the size of the pan. My guests loved the meatloaf - all had seconds, and everyone asked for the recipe. Thanks to Starbuck - a real winner!!!
