I'm a full-time-plus RN in a busy pediatric office; I often arrive home after 7PM, too tired to think.
I'm married, and the two youngest of my four children (23, 20, 14 & 9) live at home.
My husband is self-employed, and emails me at work during the afternoon if we haven't discussed it: "what would you like me to start for dinner?"
We both have elevated blood pressure and cholesterol, so have been trying to cook more healthfully. We are shocked to read labels and fine astronomical levels of fat and salt in most easy-prep foods. This has caused a change in our grocery and cooking tendencies, though it isn't easy.

My husband and I seem to end up cooking together on Sundays. I love that.
My cooking triumphs
I have a "Tex-Mex" lasagna recipe for the slow cooker (I tweaked one I found in a book) that is simple, healthy, and delicious.
My cooking tragedies
My biggest challenge has always (ALWAYS) been getting everything done around the same time for Thanksgiving dinner. Invariably I forget something, or time it all wrong. It's never been a disaster, though...
