Mandarin Almond Salad

I made this salad to go along with a Christmas Eve dinner at my mother's and it was a huge hit! Everyone wanted the recipe. Next time I'm going to try adding chicken and making it a dinner salad.

Low-Fat Blueberry Bran Muffins

These muffins were absolutely delicious! I actually thought they were a little too sweet (and I did use unsweetened applesauce), so I may try reducing the brown sugar next time.

Asian Salmon

This was an excellent marinade/sauce for salmon! I cooked only one pound salmon but used the full recipe for the marinade and it was perfect (so I do reccomend doubling if using 2lbs of salmon). The leftover marinade was sooooooo delicious spooned over rice! I will be making this one again, and again, and again...

Chocolate Chip Muffins

These muffins were ok, but not the best by far. I'll keep looking. I did add 1 cup of milk (instead of the 3/4) and an extra egg + 1/4 cup oil (instead of 1/3), and 1 1/2 tsp vanilla, which seemed to make them better. Overall, there is a key ingredient/taste missing from these muffins that I can't quite put my finger on....

Puerto Rican Steamed Rice

This rice had a really nice texture to it. I did add a couple of cloves of garlic (minced) to the hot oil and cooked until brown prior to adding the water and salt. Gave it a nice, yet mild garlicky flavor. I used Jasmine rice because it's what I had in my pantry and it turned out fine.

Carla's Fruit Dip

This was an excellent fruit dip (and a huge hit). I did follow others advice and used 8 oz of cream cheese rather than 3. I think that made a huge difference. I also used extra creamy cool whip which made it thicker (and made it stick to the fruit more!). I used strawberry cream cheese, but think it would also be excellent with pineapple or mixed berry cream cheese. Whipping the cream cheese prior to adding the marshmallow cream and whipped topping is a good way to avoid lumps. I will be making this again!

Heavenly White Cake

This cake was wonderful! I baked it in 3 pans and then put layers of whipped cream and sliced bananas between the layer. I frosted it with whipped cream. Absolutely delicious! I did add and extra 1/2 cup milk.
