I'm a little more traditional, lived in So Calif, growing up, worked in San Francisco,and when I tretired in 89 move to Mexico, 12 years, San miguel de Allende, as I love cumin, in many Mexican recipes, but nmot Mexican Rice, actually have not seen a Mexican family or Mexican restaurant, (in Mexico) use cumin in Mex. rice.also the redness looks like Spanish rice, I use ripe tomato, or good canned tomato, and only add enough to make rice a little pink not red. But now I'm in North west Montana, Mex food is very basic, most Montana people like a very mild version. So if I delete the cumin it is a good recipe.
