Homesteader Cornbread
While I don't doubt this is from her mother in law in Canada, it is just the recipe from the back of the Purity cornmeal bag (the most common brand of cornmeal here in Canada). The only thing different is this recipe uses half the baking powder stated on the bag, and it says to leave it soak for 10 minutes. I use this recipe (with the extra baking powder) all the time, and usually buy my cornmeal bulk, so I refer to this site to get the recipe. I always half the recipe to make 12 cornmeal muffins or 2 mini loaves, since it doesn't really keep. Also, you can substitute almond or soy milk just fine in this recipe, and add a lot less sugar or use honey if you want, or whole wheat flour works fine too.

Oh yum! I made this tonight with 1 big bunch of kale and 1 big bunch of chard (11 oz total). Honestly, I didn't measure the spices very carefully ! I used way more cumin seeds by accident. I have a favorite premade (in a can) saag I really like, but this is better! I always thought this would be a difficult dish to make, so always bought the cans, but it is not. I am so glad I found this recipe. I love greens, but sometimes we get so much in our weekly organic basket that I need other recipes to use them.

Greek Chicken Pasta
I have also had this recipe printed out for years but have never reviewed. Great, simple recipe. I do find it makes an awful lot though- I always half the recipe and it is enough for us ( 2 adults and a preschooler) with a substantial lunch for my husband left over. I served this last night with steamed green beans. I am jealous of my husband's lunch in the fridge :)
