Healthy Banana Cookies

for the fact that they are healthy-sugarfree-lowfat, they are good. i wouldn't refer to them as cookies though, maybe granola bites. definitely include spices like cinnamon, pinch of nutmeg. i added a 1/2tsp. of vanilla, sliced almonds, craisins for flavor and added chunkiness. nice and chewy.

Cheesecake Cookie Cups

Mmm-mmm-good! Perfect little size for cheescake. I think it looks prettier w/o a pie topping and just drizzle melted chocolate or raspberry coulis. Just added some lemon zest to the cheesecake part myself. Love this site!

Chocolate Pudding Fudge Cake

I baked this cake for a friend's b-day so I didn't get to try it but she called to say it was delicious (when warmed up, served w/ ice cream!) and that she could indeed taste the 1 cup coffee I put in for the water. When I made it the day before, I sniffed the cake and couldn't smell the coffee/mocha flavor but I guess it developed overnight. It is sooo easy and baked for 40min when oven's at exactly 350F.

Amy's Garlic Egg Chicken

Tender inside, just enough crisp on the outside. Delicious w/ fresh lemon juice! Not over powering in garlic maybe b/c I used already minced garlic cloves from the fridge. I halved the recipe and still had lots of breading leftover as well... will quarter the amount next time.

Black Bean and Corn Salad II

THIS is IT! Sooo good, colorful and healthy. I spooned it atop spinach. I used all the ingredients except for green onions - used diced red onion. Cilantro is key and so is adding some cumin to the dressing and salad before serving. Add the avocados last so they don't get mushy. My house raved over this vegetarian dish!

Easy Morning Glory Muffins

Sooo good! But yes, it is time consuming, what with all the shredding, but they loved it b/c it is chock full of goodies. Because I used Sweetened coconut, I reduced the sugar to 3/4 cup and and added 1/3c. brown sugar. I didn't use oil, I subbed w/ Libby's pumpkin puree and there you have it! Another vegetable in these moist, healthy, nearly fat free muffins! Lovely and hearty and staying in my recipe file (except I'll invest in pre-shredded bagged carrots)!

I made this a while ago and I don't really remember it. It wasn't bad, but of course, it wasn't stellar. The top part was the best b/c of the crunchy, baked topping though.

Pumpkin Oatmeal

Yes it's tasty and filling after adding some raisins and sweetening it with either brown sugar or maple syrup (omitting the cinnamon sugar). I also used 1/2c oatmeal and 1/2c milk.

Biscotti Toscani

The flavors are beautiful! It was my own fault though that they crumbled when slicing - I baked for the 25min but that wasn't long enough (maybe oven's temp is off?) since they were still soft and kinda fell apart. So on the 2nd baking, I just gave each "side" 10min each. I gave up spreading the chocolate on the sides since crumbs kept getting in the way of a smooth veneer, so I drizzled the chocolate w/ a spoon & fork --> chilled. Even w/o the chocolate they were yummy. FYI: I used all the ingredients exactly.

Chocolate Cookie Mix in a Jar

I made jars for Xmas gifts and mixed the brown and white sugars together so the brown wouldn't harden. I used a funnel to get everything into the jars at once. I used my knuckles to compress everything. Used Giant Chocolate Chunks, not chips. I may try mint or raspberry chocolate chips for lovers of flavor. Fun to make, and I hope they will be fun for receivers to BAKE ;-) Jan.22: I was just informed by one of the recipients of this jar that they made these plus WIlliams Sonoma "brownie mix in a jar" and mine was sooo much better than the store bought brownies!! nice! I'm in love with this site!!

Cheesecake Topped Brownies

Chewy, yummy, rich, with a thick layer of the cheesecake b/c I only had the brownie mix for an 8x8 pan but that didn't stop me! I used obviously only half the cream cheese mixture. Used neufatchel cheese, reduced to 1TB melted butter. Also omitted frosting. Baked according to the package directions (~28m) and dusted w/ cocoa powder w/ star stencils then chilled in the fridge. My dinner group LOVED it! I would add some (mint? raspberry?)chocolate chips in the brownie batter & lemon juice to the cream cheese mix next time. Make sure to shake the can of sweetened condensed milk well, b/c I did not and some of it was carmelized at the bottom of the can. Now what to do w/ the leftover cream cheese mixture...

Tuna Curry in a Hurry

Good flavor b/c I doubled the curry and also added a dash of cumin. Used red, not green bell peppers. I reduced the sour cream to 2/3c and it was still too "soupy" for my taste. I ate it plain and therefore it didn't seem like it could go 4 servings.

Blueberry Cream Cheese Pound Cake II

Can't say enough about this creation! Moist, light, fruity. I also used French Vanilla cake mix. I mixed 2 boxes of each lemon and vanilla pudding and measured out half the portion. I used drained, thawed frozen blueberries and made a glaze of powdered sugar and lemon juice. Very delicious! And of course, easy :-)

Cheesecake Bars

oh they're mmmmuch better the day after being baked, if they are refrigerated. the crust was not as good as the "lemon curd bars" crust though... i'd still make again as they were easy and yummy. i nuked raspberry jam (w/ seeds) then strained the seeds thru a sieve to get it seedless then drizzled it atop the bars. they received ooohs from my happy neighbors!

Moroccan Chicken

Sooo very good! We only made one change: forgot to buy crushed tomatoes so just diced a whole one. Spicy and a delicious blend of my favorite spices. The chickpeas are key. Served over couscous for company and everyone took seconds! Try it.

Best Cocktail Meatballs

I don't eat beef but judging by my friends' reaction, they get 5*****! Many compliments and I admit the smell of the sauce slow cooking in the CrockPot was delicious to me! I used slightly over 1lb. of beef and had no problems with the balls being too 'wet' but also sprinkled some seasoned breadcrumbs anyway. Half BBQ sauce/half Ketchup for the sauce. I broiled for 10 min then put in CrockPot for 3 hrs --> were slightly overdone this way though. A hit appetizer and easy!

Lemon Curd Bars

Oh! So very good and I didn't change a thing to the recipe except put it in a 8*11 pan b/c I don't have the 9*13 which was nice b/c the crust and toppings were thicker. Toasting the almonds is important for flavor. Simple delicious recipe!

Impossible Coconut Pie II

interesting... didn't taste like coconut to me but it did taste like a custard. The "crust" formation was definitely different. It took longer than 45min b/c I kept thinking it wasn't done due to the "wet look" but after I let it set overnight, it congealed wonderfully. The top had a golden brown. I used almond extract as well. We both liked it but wouldn't call it a pie... 5 stars for it's level of easiness!

Easy Easy Casserole

not bad but it's b/c we made lots of changes. 1. sauteed onion w/ the turkey (and garlic) 2. instead of creamed corn (sounded wierd) used a corn and peppers frozen blend (thawed). 3. topped the turkey w/ italian diced tomatoes w/ all the seasonings instead of tomato soup. 4. topped it all with leftover slices of potato, basted w/ butter. * the italian diced tomatoes made it kinda watery so just drain it before serving. Also it's key to slice the potatoes very thinly and they'll cook in time. Might try to top with some cheese next time; otherwise, not bad for a simple prep dish!

English Royalty Chocolate Chip Scones

Upped the butter to 8Tbl. Didn't have OJ but put in 1/2c. 1% milk and 1tsp. orange extract. Didn't have chocolate chips so used Orange Essence Craisins. The smell alone lured my boyfriend to the oven to taste (and burn his tongue) on the first one out! Softer than most scones (I think it was the extract oil?)) but the flavors are paired perfectly! Maybe after a day will be more dense? Don't know much about scones but can't wait to try w/ chocolate chips!
