Best Big, Fat, Chewy Chocolate Chip Cookie

Yep, these are seriously delicious. Perfect I would say. I made the recipe exactly as directed, with the addition of 1/4 tsp cinnamon to add some depth to the cookie. A few important tips: 1) Invest in an oven thermometer, and make sure you bake at 325. Low and slow makes a world of a difference in cookie texture! 2) Slightly flatten your cookie dough balls into thick disks for even cooking 3) let the melted butter cool to nearly room temp before mixing with the sugar. Too hot butter will melt too much of the sugar and again change the texture and taste. 4) Most importantly: Eat at least one fresh out of the oven, SO GOOD!

The pastry is perfect. But when I make these, I always opt for a homemade pastry cream, which is why I deducted one star.
