One Dish Chicken and Rice Bake

I rated this 5 stars after taking Monte's suggestion. Also I used cut up chicken beasts and just stirred it all together. Our family was getting over a tummy bug and this was just the type of comfort/ gentle food we needed but with the modifications it wasn't bland or boring.

Chocolate Covered Strawberries

This is an awesome recipe! I love the review that suggested making in the microwave at around 70% pour, a minute or so at a time. It is easier than the store-bought chocolate made for dipping. These are so easy and delicious. Love it!

Italian Kale

This was so good. I changed it up a bit by mincing up a red onion and sauteeing it in the olive oil until tender, then adding a clove of minced garlic. Finally added the kale, with about 1/2 cup of beef broth, and the balsamic and reduced. It was amazing!

Tater Tot Casserole

5 stars because this is the easiest tater tot casserole I've ever made, it's ridiculously quick, and it was good as is with no modifications. I also like the Duggars' tater tot casserole recipe, but it's too heavy on the potatoes. This recipe was better balanced. Cheers!

Chicken Breasts with Balsamic Vinegar and Garlic

This was a solid recipe. I personally would have added even more mushrooms and perhaps more liquid to result in a bit more sauce, but that's a matter of personal taste. Also, take care not to let the sauce burn. I think it could easily do that on medium high heat. I would turn it down to medium low heat when reducing this sauce. It was tasty, and pretty, and we will make it again!

Easy Salmon

The best salmon I have ever had, including at restaurants. I think on some recipes people change things just for the sake of changing them. This one to me is perfect as is. So my advice is to make it as is first.

Tortilla Rollups IV

Have served this twice now, once at a bridal shower and once at a super bowl party. Both times it was a big hit. Once I couldn't find the spicy Ranch dressing mix so I used the regular. It came out just fine. One thing to watch out for: It makes more filling than can be used on 10 tortillas. So, maybe have a few extra tortillas on hand, or some crackers to eat the rest of the filing on. YUM!

Chicken Parmesan Bake

Solid recipe. Points for being super easy, and lighter than a breaded and friend chicken parm. I do think the chicken came out a little tough. Next time I will try pounding it thin first to see if that makes any difference.

Brazilian Lemonade

Fabulous! I followed directions to a T but tasted after the 5 pulses and blended mine up quite a bit more. I had no problems straining. Here's a tip: dump it into a pitcher with a straining lid and then you don't have to strain. Just pour. ;)
