Pear and Pomegranate Salad

Good starter recipe for a salad. I think some almonds, pecans or cashews would taste great (candied ones would be even better, but more calories), Next time will add varied leaf lettuce or spinach. Dressing was good.

Eggplant Parmesan With Easy Homemade Sauce

Don't leave out the red pepper. I used about 1/4 t. ground red pepper instead of flakes. My hubby wondered where the meat was, but I liked it just as it was. Great way to use egg plant from garden.

Happy Apple Zucchini Muffins

Roasted Beet and Kale Salad

I was surprised at how much better it was the next day when the flavors really came together. I made a few changes, only because I didn't have all the ingredients on hand, but they were slight. I used pecans instead of cashews and used regular raisins instead of golden, and used craisins instead of dried cherries. The roasted beets were delicious in this salad, and a great way to use up the beets from the garden. I also added about 2-3 extra beets. One other change was to the method of prep: I poured dressing (only used about 1/2) on just the kale and massaged the dressing onto the kale with my fingers. I do this with another kale salad and it really softens the kale, but doesn't make it soggy. Then I added the remaining ingredients. Thanks for the recipe!

Honey Beet Salad

I thought it was a good way to serve beets that keep coming out of my garden! I cut back on onion and used feta cheese only because I don't care for blue cheese. Also, I didn't have parsley, but tasted good without it. Thanks for recipe!

Red Pepper and Fennel Bulb Salad

I took the advice of others and added more red pepper and I also made the dressing a little differently. (1 1/2 T. toasted sesame seed oil, 1 T. soy sauce, 1 T. canola oil, 1 T. sugar, 1 1/2 T. rice vinegar, 1 T. sesame seeds). We also added fresh spinach leaves. I think green onions would have been good, too. We served it with grilled chicken satay and rice. YUM! I had never used fresh whole fennel before and I really liked it!

Chocolate Cherry Cake III

Delicious! I used frozen sweet cherries, making my own pie filling, and used milk chocolate cake mix. I found the chocolate topping a bit sweet, but overall very yummy especially with a scoop of ice-cream!

Peanut Butter Banana Protein Bars

This was just what I was looking for! I had chocolate protein powder, so I used that, plus about 1T. cocoa powder to boost the flavor. I also added about 1/2 c. craisins. Because so many reviewers commented on the dryness, I added a few (2) more previously frozen bananas, to add moisture. I convected them at 350 degrees for about 8-9 min. Next time I will use crunchy peanut butter. Delicious!

Butternut Squash Soup

Because I don't like to peel butternut squash, I baked the squash first then added to the softened onions. I used chicken broth and only one package of light cream cheese. My family really liked it. I probably doubled it as well, as I like to have leftovers.

Refreshing Cucumber Lemonade

I didn't have fresh lemons, so I used the bottled, Real Lemon. I found it to be rather tart, so I added a bit more water and sugar to taste. We all found it very refreshing and a nice change.

Japanese Peanut Salad Dressing

I didn't have some of the ingredients on hand, so I had to improvise. I used 1/4 c. seasame oil, 1/2 c. canola oil. Instead of peanuts, I just used about 1/3 c. chunky peanut butter, a bit of cayenne pepper to taste, salt and petter and I added the onions to salad instead of in dressing. I served over fresh spinach, oranges, honey roasted sliced almonds and green onions. Yummy! Thanks for the recipe!
