Slow Cooker Pinto Beans

I am not a big fan of beans, but this recipe looked good. It is not, it's fantastic! I used bacon instead of ham and celery seeds instead of celery because I didn't want to run to the store for two ingredients. These beans are super flavorful as a side and they added a lot of flavor to my chili. My biggest issue with dried beans is the texture, but these turned out wonderfully creamy and plump. I will definitely be making these again.

Best Peanut Butter Cookies Ever

These cookies are simple and delicious; a deadly combination! It took me about an hour from start to finish. I love that the recipe is gluten free (depending on what peanut butter you use). I was looking for a great peanut butter cookie recipe that would not fall flat when baked. This recipe did the trick. I did use half brown sugar and half white sugar as was suggested in some other comments. I feel like this made the cookies a little chewier than they might have been otherwise. I will definitely be making these again and again. Instead of doing the criss-cross, I used chocolate hearts in the centers. They did not last long. I suggest making at least a double batch if you have a cookie monster in your house like I do.

Debdoozie's Blue Ribbon Chili

This is now my go-to chili recipe. My fiance loves it, even though he calls it soup since he's from Texas and "Chili doesn't have beans". I recently took it to a work chili cook off and tied for first place. It has a little bit of spice without being too overpowering. I love adding a little sour cream and chopped onion as a garnish. If you like your chili with a little bite, you'll love this too.

Crazy Chocolate Cake

I will not make a boxed chocolate cake again. This cake is ridiculously simple and it's so moist and chocolatey. I was worried that it didn't use any eggs or butter, but they are not needed. I split the recipe into two 8x8 cakes (because there is no way my fiance and I could ever finish a whole batch ourselves.) The first cake I topped with whipped topping. The second cake I'll be topping with a chocolate butter cream frosting. So delicious.

Fluffy Pancakes

These pancakes are so easy even my fiance (who thinks making a bowl of cereal is cooking) could make them. I did not have regular white vinegar, so I used apple cider vinegar and they turned out just delicious. My only problem is that these pancakes may be a little too fluffy. But I will definitely be making these again! Next time I'll make a blueberry sauce to drizzle over them.
