Chicken Salad with Bacon, Lettuce and Tomato

Terrific salad! I followed a couple reviews and used some sour cream, rotisseries chicken and mixed the avocado in with the chicken, etc. It would be good as a wrap sandwich, too. My husband rated this as better than his favorite chicken salad from a favorite restaurant!

Hash Brown Sandwich

It was delicious! I substituted 4+ cups of frozen shredded potatoes (Purely Potatoes) which made the recipe much easier. I also added red onion and a few dabs of sour cream and, probably more cheese than called for.. As expected, It didn't remain a "sandwich" because the potatoes wouldn't stay together. It didn't matter, though, as it was still yummy. My husband wanted to know what it was called so he could ask for it again.

Bacon Wrapped Pesto Chicken

Delicious. I took the advice of a couple reviewers and added garlic powder and Parmesan cheese to the chicken. I used pre-cooked bacon (two slices for each) and it was nice and crispy without the broiler. Try the recipe on this site for homemade Basil Pecan Pesto.

Erica's Delicious Slow Cooker Beef Roast

Delicious--the meat just fell apart. I did add more carrots and potatoes than called for since we like more. I also used the whole package of onion soup since I wasn't sure I'd use the other half. Gave it lots of extra good flavor. A definite improvement.

Slow Cooker Stuffing

Terrific! My husband said it was the best I'd ever made. I used only 2.5 cups of broth & used the rest from the 32 oz. container with the gravy package that came with the Jenny-O turkey instead of water. I eliminated the poultry season, salt and pepper as I could only find pre-seasoned bread cubes. I cooked it about 5 hours and took the lid off for the last 30 minutes. The little bit of crusty stuffing around the outside was just right with the moist stuffing in the center! Spraying the crock with cooking spray before cooking made cleanup a breeze. Highlly recommend the Rosemary Roasted Turkey, too!
