Addictive Sweet Potato Burritos

This was pretty good, but not as flavorful as I would like. Next time I will double the spices, and maybe add some salsa directly to the filling.

This is a great idea! Instead of the spices (which I didn't have), I sauteed some garlic and then added 2 tsp of garam masala spice mix. I also used two teaspoons of canned hot jalapenos instead of the chili peppers. I love samosas, and these tasted almost like the ones I get from the restaurant, and were much cheaper! I used Pillsbury reduced fat croissant dough.

Blueberry Coffee Cake I

This was pretty good, although it was a little sweet for my taste. I would cut down on the brown sugar next time, to about 3/4 of a cup. I made them in muffin tins and baked them for 28 minutes to make "personal" sized coffee cakes :)

Oatmeal Butterscotch Cookies

I cut the butterscotch down to 1 and 1/3 cup, and then added some chocolate chips (for me!). THe texture is great, not to cakey but chewy and crispy on the edges.

Cowboy Cookies III

I also cut the butter and sugar down to 3/4 cup. I added half a cup of walnuts for kicks, and they turned out great. They don't flatten out for me at all though. They freeze great.

Mango Tango Black Bean Salsa

This is a fantastic alternative to regular salsa. It tastes best with salted tortilla chips (or with the chips with a touch of lime). I added a can of diced hot jalapenos to give it a little more kick and I used red onions. Letting it refrigerate over night makes it better.

Brown Sugar Meatloaf

This was an easy, good meatloaf. We doubled the recipe and glazed the bottom, top and sides. Cut back on the brown sugar about 2/3. I added a dash of teriyaki sauce to the glaze, which was a nice touch, and we used green onions. Yum!

Crispy Chicken with Honey Dipping Sauce

The honey mustard touch was good, but my chicken came out a little uneven (some pieces were tough, some juicy). Also, the potato chips didn't stay on at all.
