Brown Sugar Instant Oatmeal Muffins

Was looking for a way to use up some of my maple and brown sugar instant oatmeal and found this! Turned out great. Dried cranberries would be a great addition. Streusel topping is a must!

Refried Beans Without the Refry

I have tried several crockpot refried beans recipes, and this one is by far the BEST and the EASIEST!! Next time, I will put in the whole jalapeno since we like spice and half did not spice it up, just flavored it well.

Asian Lettuce Wraps

I used all tofu, and it turned out great. Loved the addition of the sesame oil at the end (I used hot sesame oil). Don't skip this part!

Green Chile Puff

This turned out great! I did not add the butter and used nonfat cottage cheese to reduce the calories so it wasn't as rich as it probably should have done. But, it was still tasty and the leftovers are great wrapped up in a tortilla as a breakfast burrito!

Death By Chocolate V

This had mixed reviews due to the crunchy crust it had. The inside was really moist, but the crust was munchy. This is a great cake for a dark chocolate lover vs a milk chocolate lover.

Angel Hair Pasta with Garlic Shrimp and Broccoli

This is a great recipe, no complaints about that. I even substituted fat free evaporated milk for the cream to lighten it up a bit, and it was still tasty. The only reason I give it 4 stars instead of 5 is because it took several pans to get this dish going, and I would increase the amount of broccoli next time.

Sugar Glazed Walnuts

This is a great recipe for quick and easy sugared walnuts, but got mixed reviews for taste at my house. I thought these tasted like little sugar bombs that did not allow the walnut flavor to come through. My husband liked them a lot saying they tasted like walnuts to him! I added some cinnamon to mine as well.

This is my first unfavorable review! I came home to a pile of burnt on the outside, uncooked on the inside beans. This recipe needs more water if it will be on high for 6 hours.

Tofu and Veggies in Peanut Sauce

This was just great! I did cook the tofu first and set it aside, then sauteed the broccoli for about 3 minutes, then added mushrooms for 2 minutes, then added the sauce for another 3 minutes. Added tofu on top last. Others noted this as being too sweet, but I did not have this problem. If you are using already sweetened peanut butter like Jif, or Peter Pan, than yes it might be too sweet. I used natural peanut butter and it was delicious.

Quick Stuffed Tomatoes

Very easy recipe that looks great on the table. I omitted the mint and the mozzarella. Will probably add the mozzarella or feta next time. Also, if you are in a hurry, use sundried tomato flavored couscous (make it in five minutes) and these will be a snap to make!

Zucchini Cookies

These were great! I brought them into work and they were gone in one day. Great spicy note from the cloves. I used dried cranberries instead of raisins, and made sure not to overbake, as others suggested. This cookie was more moist than any I have ever baked!

Cake Mix Cookies I

These were such a hit! I used a Betty Crocker devil's food cake, and added 2 TBSP water to get a consistency that I liked. I used a tablespoon cookie cooker instead of a teaspoon as it states in the directions, so it took about 17 minutes for each batch to bake. I also added white chocolate chips. These were the most chocolatey cookies I've made, and sooo easy!!!

Lighter Banana Muffins

I made a fe wmodifications and they still turned out great. I used half whole wheat bread flour and half regular white flour. I also used half white sugar and half brown sugar, and sprinkled a bit of brown sugar on the top (looked great, though made them sticky to handle). Very yummy lowfat recipe!

Ground Beef Enchiladas

We both liked this and thought it was a great change from our regular enchiladas. We are vegetarian so I used Cream of Mushroom soup instead, and a vegetarian ground meat substitute for the beef. Loved the zing that the yogurt gave this, and made it seem so creamy!

Zesty Marinated Asparagus

I thought this was pretty darn good. I am not an asparagus lover, but when it is cooked just right and with a good sauce like this, I can definitely eat it. I was too lazy to do the lemon zest part, so left it off.

Basil and Sun-dried Tomato Bread

I thought this was excellent. It tastes like pizza bread! I sliced tomatoes and sprinkled parmesan cheese on the top, put it in the toaster overn for a couple of minutes and voila! Yummy!
