Black Beans, Corn, and Yellow Rice

I prepared this recipe as written and it was excellent. I think it could be stretched with more rice, and I wouldn't mind adding more cumin and lime juice because I like bold flavor. The recipe seems to lend itself to variation, and I will likely try adobo seasoning in the next preparation and add green chiles or nopalitos. I would also pass the hot sauce for those who like it. All in all, it's a great vegetarian recipe.

Favorite Hamburger Bites

This makes an excellent slider appetizer. I did use just one-half of the soup mix, and added a tad of yellow mustard to suit my personal taste. Make sure the pickles are not sliced so thickly that they overwhelm the slider. In a pinch, a hot dog bun sliced into thirds will work.

Slow Cooker Chicken Marrakesh

I made this recipe with some substitutions and will likely substitute further if I make it again. I used cannellini beans and chicken thighs and added some stock to make the recipe more of a stew. I doubled the spices and then some, except for the salt and cinnamon. The sweet potatoes and cinnamon made the dish a bit too sweet for my taste and the sweet potatoes/carrots combination did not make for eye appeal. Next time I will either use Irish potatoes or use another vegetable, such as eggplant. The recipe lends itself to variation and the prior suggestions for substitutions, such as using garam masala, sound good.

Braised Pork Ragu

I used pork sirloin and roughly followed the proportions of ingredients except for using a regular sized can of tomatoes, despite which I still needed to thicken the sauce a little with some cornstarch. Instead of wine I used red wine vinegar and a pinch of sugar. I also used trio -- a blend of onion and peppers, and served the dish with mashed potatoes. The dish has great flavor and I will definitely make it again. It is probably better suited to rice than to potatoes.

Kathy's Delicious Italian Pasta Salad

Like most cooks, I subbed in this recipe with what I had on had, i.e., ham cubes, sun-dried tomatoes pscked in oil and shredded Italian-style cheese. I added Italian seasoning and found that I needed a small amount of salt. Next time I will try red wine vinegar and add marinated artichokes or garbanzo beans if I have them. For me, the best flavor in the salad came from the sun-dried tomatoes. This is definitely an entree salad. All in all a great salad!
