Quick and Almost-Professional Buttercream Icing
I LOVE this recipe! I am very picky with frosting and usually leave it on the plate....but not this one. The flavor and consistancy is perfect. It's so smooth and creamy. The recipe does yeild a small amount if you're trying to ice a cake. With one recipe I was able to spead a generous amount between two 8" round layers and crumb coat it but didn't have enough icing left to properly spread between two 10" layers. I did doudle the recipe and it too turned out perfectly. Thanks for the PERFECT buttercream recipe!

Cookies and Peppermint Ice Cream Cake
This was my first ice cream cake and this recipe made it so easy. I took the advice of a few reviewers and added butter to the cookies and I made the cookie layer thicker as my family loves that part. I also doudled the fudge layer and used chocolate chip mint ice cream. I made it into a 2 layer cake. One being ice cream and cookie and the other being chocolate cake and ice cream. I also used a whipped cream frosting recipe from this site as it was for a birthday and I wanted to decorate it. It turned out great!

Slow Cooker Beef Stew I
My family and I loved this stew. I did follow Corinne's advice as I am accustomed coating and browning the beef for stews. I never have a problem with the beef being dry and this was no exception. It almost melts in your mouth but isn't soggy either. I do need to brown it in 2 separate batches. My only issue was that I am not much of a wine drinker so I had no idea what kind to buy. I had heard that you should never cook with a wine that you wouldn't drink. I ended up buying Sutter Home Sweet Red Wine, not expensive but still good especially if you're not wanting to spend a fortune on something you might not use up.
