Caramelized Spicy Pumpkin Seeds

My kids (ages 3 & 5) and I LOVE this recipe! I too used brown sugar in the pan as others suggested and they came out awesome! I had to roast mine in the oven a bit longer than suggested and I ended up bumping up the temp to 400, next time I'll prob do 10-15 mins at 400 - just because its quicker. I will be keeping this recipe and making it for years to come I'm sure! Thanks!

Sangria! Sangria!

This is an awesome Sangria recipe! It takes a bit of time because its best if you can let it sit for awhile, but it is SO worth it! I've made it multiple times and people always want the recipe! Thanks! :)

Brazilian Black Bean Stew

This stew is AMAZING! I have made it multiple times for birthday parties, family events, potlucks - every time people RAVE about it and want the recipe. Its incredibly delicious - I love how the different flavors come together. Its best if you can make it in the morning and let it just sit all day, then reheat for supper! This is a winter staple for our household - thanks! :)

Stuffed Zucchini

This is an amazing recipe!! I only made 2 tweaks - first I cooked the non-stuffed, but scooped out zucchini in the oven, by itself, for 25 minutes - it just helped it cook more even I think. While that was cooking I browned the sausage (a must in my opinion) and assembled the filling. When the zucchini shells we done I took them out, filled them as the recipe says, and put them back in to cook for another 20 minutes. The total cooking time for me was the same, but I think the zucchini is better cooked and the sausage is much more tasty due to the browning. I'll definitely be making this recipe again and again - we LOVE it! :)

Super Duper Zucchini Muffins

These muffins are very tasty - great recipe! As a few other suggested, I doubled the milk - it just helped the batter be a bit thinner, its quite thick. Mine took the full 20 minutes to cook and I got 17 muffins from this recipe. I am definitely keeping this recipe for future use! A great way to use the abundance of zucchini coming from my garden!

Potato Leek Soup III

We really liked this soup and its super easy (and quick) to make!! It does need quite a bit of salt in my opinion, but that's to be expected I think, might have been because I used low sodium broth. A great, go-to soup for a chilly fall/winter day!

Hot Crab Dip

This recipe is super tasty and great for parties! I made it for a potluck and people raved! I added an extra can of crab because I like mine extra "crabby"! The small amount of hot sauce is perfect and not too spicy at all, even for people who don't like spice much. I'll definitely make this recipe again! :)

Coconut Chocolate Chip Cookies

These cookies came out great! I didn't have coconut extract so I used vanilla, they came out just fine but the coconut flavor was very mild - so if you prefer that just use vanilla extract. Also, make sure not to overcook these because the bottoms will get brown fast - with my oven 12 mins was perfect. I did use 1 full cup of coconut because I really like it - worked fine. This is a small recipe, I got 18 cookies with it (approx 3 inches in diameter) - so if you want more definitely to a double batch. Great recipe though, thanks! :)
