Meatloaf With a Twist

I am making this again tonight for the second time. First time around was hearty and delicious...liked that the mashed potatoes were inside. I even forgot the Romano cheese and it was still good. Will add it this time, awesome comfort food recipe! My changes were used half ground beef and half ground pork and did not use 1/4 cup of olive oil..seemed unecessary and it was. Delicious!

Dark Chocolate Cake II

Wow, what delicious cake...so moist and flavourful. I made them into cupcakes instead of a cake (baked for about 15 min @350 degrees) and Iced them with mocha frosting recipe from this site. Amazing. This will be my go to chocolate cake recipe...and so easy too!

Zippy Shepherd's Pie

This is a great shepherds pie recipe, have made it twice now and tweaked it a bit the second time (was good as is) I used a heaping tsp of curry powder for some extra flavour (because I like curry) and I used julienned carrots instead of frozen. Just let them cook with the beef mixture. I did not pop it in the oven right away, made ahead of time, then put in oven for about 1/2 hr @ 375). Best to cover with foil until the last 10 min or so, so that the cheese does not get too brown. Yummy.

Stuffed Green Peppers I

Delicious...I have had stuffed peppers before and they have just been ok, but these are great. I made a few slight changes. Just added a bit more worchestershire sauce, garlic seasoning salt and used a 3 cheese nacho blend cheese, also added some parmesean. As another reviewer suggested I put some tomato soup half way down the pepper. I used red, green and yellow peppers for some colour. They are very hearty and filling and full of flavour. Try it!

Mini Pumpkin Whoopie Pies

These are AMAZING...so good. The cookie is soft and fluffy and the cream cheese filling is perfect for it. As some others suggested I used a piping bag to make uniform cookies and used 6 oz of cream cheese instead of 4 and 4tblsp of butter. I just like that extra cream cheese flavour. Will be bringing these to thanksgiving dinner!

Brown Rice and Black Bean Casserole

This was so yummy! It doesn't seem like it would be full of flavour, but it is. I had to make a couple of changes because I did not have certain ingredients. I chopped half of a canned adoboe chile in sauce in place of green chilies (which gives it a bit of a bite!) and I used monterey Jack cheese instead of swiss. The only thing I found was there was not quite enough liquid for the rice, next time I will do in the rice cooker, comes out perfect every time. I will make this again, thanks.

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Yum, I only made a slight detour from the original recipe...pan fried the bacon, and used cornflake crumbs instead of bread crumbs. The chicken was moist and flavourful. I don't think I stuffed it enough, I had 5 breasts and was left over with some of the bacon/cheese mixture. I used it in scrambled eggs the next day. Will make again, but not too often just because of high caloric intake, but delicious!

Zucchini Bread with Cinnamon Sugar Topping

Very moist and delicious. I made a few slight changes. Used 2 cups whole wheat flour and one cup of white, 3/4 cup veg oil and 1/4 c apple sauce, added chocolate chips and didn't make the sugary topping. Will make them again! Sooo good!

Shrimp Fettuccine Alfredo

This was a very good recipe and simple/fast to make. I made a few changes after reading some of the other reviews. I made about 1/2 cup more sauce, and added the shrimp after the sauce was done. I did not have parsley so I used fresh frozen dill instead. When the pasta was almost finished cooking I added some fresh green beans to the water, drained then mixed in the sauce and shrimp. Very tasty. Will make again when I need a quick dinner.

Summer Tomato Salad

Tomatoes have their best flavour when they are not refrigerated. I actually will not eat fresh tomatoes if they have been refrigerated. I think just letting the flavours mingle at room temp would be tastier.

Simple Whole Wheat Bread

This bread is very good. Followed to the letter and have made it twice so far. Has come out great both times. I will comment that the bread is a bit dense in texture, but I like that in this bread. Very tasty and easy.

Zucchini Muffins

This muffin recipe was ok. I took others advice and added some sugar, glad I did or it would have been really bland. The muffins are really dense. I have definately had better.

Rhubarb Strawberry Crunch

Stuffed Cabbage Rolls

This turned out great. I did use some of the others tips. I baked in oven at 350 for 40 min, made my own sauce as was suggested by another member (8oz can of tomato sauce, tblsp brown sugar, tsp worcestershire sauce and tblspn lemon juice, and a bit of salt/pepper) poured over rolls and put loose cabbage leaves on top so they didn't dry out...they were great! Will make again.
