Chicken Parmesan

My husband is a big "sauce" guy, and after reading this recipe only used 1/3 cup on each chicken piece, I still decided to make it exactly as written. It's unfair to truly rate a recipe when you do substitutes and change ups. That said, I also feared the cheese would be too well cooked. NOT! Everything came out perfectly and was enjoyed and raved over! This is definitely a keeper!!

Classic Restaurant Caesar Salad

This is truly a "classic" Caesar recipe! I've been using it for years and the only one single ingredient I change is the fact that I use anchovy paste rather than chopping them up. Just a large squish and it's still got the flavor without the ick factor!!

Broccoli Chicken Casserole I

I made this with a whole rotisserie chicken that I shredded, 97% fat free cream of chicken soup, 2% shredded sharp cheese and lowfat mayo. I know, I know...but I layered it mid-morning, covered and refigerated it and that evening threw it in the oven! Super easy and my picky husband, Mr. Full Fat Everything, raved about it! High fives for this keeper!!!

Tuna Melts

Using a whole cup of mayonnaise dilutes the flavor of the tuna too much. This recipe cuts calories in that it's baked in the oven and not grilled in a skillet. However, the clincher is the cheese....you really need to use either cheddar or swiss to get that zing in your tuna melt flavor!!

Cheesy Ham and Hash Brown Casserole

As always, I make a recipe exactly as the person submitting it states. That said, when I make this again I will add more ham or a little cooked and chopped bacon. But will omit the parmesan cheese. It overwhelmed the other ingredients. Can't be too bad though...I brought home an empty casserole dish!! :D

Slow Cooker Green Beans, Ham and Potatoes

Just have rediscovered my crock pot and I thought this recipe was something different and something I could put together quickly. Threw everything in at one time, as another reviewer suggested, and cooked on low for 4-5 hours. Two things I did differently: I used one packet of Goya Ham Concentrate sprinkled over the green beans rather than the chicken bouillon. And instead of the ham hocks I used a large Boar's Head ham steak, chopped. Excellent!!

Pan Fried Tilapia Sandwich

Hamburger Steak with Onions and Gravy

This recipe is the bomb!! Don't change a thing with any of the ingredients...I hate when people rate a recipe after they put their on customized version on it! I served this with mashed potatoes and my husband said, ""This is so delicious"....I replied, "It's the like eating back in the 60's , isn't it?"! He agreed....believe me, this is old time, and we loved it!!! Comfort food at it's best....thanks!!
