Chocolate Tom Thumb Bars
This recipe is ridiculously good. I bring in items to work probably 2-3 times a week, and this has been praised as one of the best. A couple of tips: instead of stirring in the chocolate chips, press them into the cookie dough before spreading on the meringue. After spreading on the meringue, press parchment paper lightly onto the fluff so that it doesn't brown too quickly. Carefully peel it off 2/3 of the way through baking and continue baking to allow the meringue to crisp and brown. Allow to set overnight so that the meringue softens slightly and becomes chewy and splendid. YUMMMMM

Cranberry Nut Granola Bars
I made these last night in order to use up a bag of Trader Joes Trail Mix and some extra sweetened, shredded coconut. WOW these went over well at the office! I bring in items at least twice a week, and nothing has ever disappeared so fast! I would recommend refrigerating these for about 20 minutes before cutting to ensure clean cut lines. I can't wait to experiment with lots of different add-ins! The sweetened condensed milk makes these granola bars incredible!

Sweet Potato Pie I
I made this pie for "Friendsgiving," so it had to stand up to a whole array of pies that others had brought. Taking the advice of others, I used two large sweet potatoes and roasted them at 400 degrees for an hour and 10 minutes. I also substituted evaporated milk for the regular milk and used half brown/half white sugar. It baked up wonderfully and set after cooling completely. The party was the next evening, and I wish I had let the pie sit out at room temperature until then, because the crust got a little too soggy for my liking. So my tips are: use the substitutions recommended by many other users, avoid refrigeration, and roast-don't boil-your sweet potatoes.
