I'm a busy, at-home, mom of 3 children. I live in a suburb of Atlanta, GA.
My favorite things to cook
Yummy desserts, comfort food, Mexican dishes, Kid-friendly dinners that actually taste good to adults, too! In the colder months, I love to make soups, stews and chili. I'm finding more slow cooker recipes that I like for the busy afternoons filled with Cub Scouts and Soccer Practice.
My favorite family cooking traditions
My grandmother and mother are purists--If it calls for butter, don't substitute margarine! If you can make it from scratch, don't buy it pre-packaged. My mother makes the best pies ever, and I think her secret is a wonderful, flaky crust that is fairly easy to make. My grandmother grew up poor, and some of our favorite dinners growing up were recipes from those lean years. My brothers and I all still love to eat Hamburger Gravy and Fried Potatoes around my mother's table!
My cooking triumphs
Any new recipe that I can get all 5 people in my house to eat, is a triumph! My husband and I make some really good enchiladas (a pan of chicken and a pan of cheese) along with his traditional Mexican rice and Sweet Corn Tomalito (from this site). I could make them myself, but having a second set of hands to do the tortillas and the rolling, help speed things up!
My cooking tragedies
I started a grease fire once in college when making homemade enchilada sauce. (The recipe called for boiling the oil?) I do buy canned enchilada sauce now, and like it just as well.

Easy Ham and Cheese Appetizer Sandwiches
My mom made these, too, so we've had the recipe in our family for years. I make them for dinner, and my family gobbles the up (even my picky 7 year-old daughter). The best rolls to use are the King's Hawaiian rolls. The sweetness in the rolls is a perfect match for this savory treat! I also chop the ham, but leave the Swiss cheese in slices. I just lay them on top of the chopped ham. I also loosely cover them w/ foil while baking. It helps get everying melted w/o drying out the bread.

Chicken Cordon Bleu II
Everyone in my house loves this recipe. The sauce is amazing. You will definitely want to double it. I serve this with rice & peas. Pour the sauce over everything! My husband used the leftover sauce over eggs for an Eggs Benedict-type dish. I've used Apple juice instead of wine, and it's fine. Get the biggest chicken breasts you can find to make the rolling easier.

Best Chocolate Chip Cookies
Perfection! I've been searching for the perfect chocolate chip cookie recipe, and this is the best I've found! I'm not sure what the secret is, but I've never put the baking soda in water, so maybe that's it? It's a keeper!
