African Peanut Soup

An excellent soup. I tried to adhere strictly to the recipe, but did follow the advice of others and replace 1/2 of the tomatoes with salsa. Used chicken broth instead of vegetable, used natural chunky peanut butter, used quick cooking brown rice. Agree that chicken would be good. I think that I will add sweet potato next time as well. When I first tasted this right after preparing, it wasn't anything great. But, after it had been in the fridge for awhile, it was absolutely superb. My family made fun of me for making peanut soup, but they all said they loved it.

Velvety Chicken Corn Soup

Wow! This was fantastic! Much better than what we had recently bought at our little Mom-and-Pop Chinese restaurant. And so easy to make. I doubled the chicken. It was still pretty thin, so I added a can of whole kernel corn over and above the creamed corn. I doubled the amount of egg white as well. I guess we like a full-bodied soup. Mama liked the soup plain, but my husband and I both loved it with both the scallions and the pepper infused vinegar added to the bowl at the table. Thank you for such a fabulous, quick, and easy recipe.

Autumn Apple Salad II

We really like this. It is much better than the waldorf salad Mama used to make which was drenched in mayo or even worse Miracle Whip. I made it just as written except did drizzle the apples with freshly squeezed lemon juice just to keep them from browning. Everyone ate it well, and there will be leftovers tomorrow for Mama's lunch.

Mom's Salmon Mousse

An awesome, simple, quick recipe. Pleased my whole family of not picky eaters, and most impressively my picky niece. I did make some changes. I did not use the carrots as I couldn't find a grater or food processor. I used a small, diced onion instead. I couldn't find a loaf pan, so I baked individual loaves in a muffin tin. This recipe doubled was the perfect amount for a tin.

Greek Garlic-Lemon Potatoes

Thanks for a fabulous recipe. Made nearly as directed except didn't peel the red potatoes, must have cut smaller chunks of potatoes as mine were done in much less time, tripled the garlic, and used all olive oil. Everyone had seconds--even my "picky" niece who then took leftover potatoes for lunch the next day. Believe me there is no more resounding endorsement than that. The picture looked like it had feta sprinkled on top, but the recipe did not include. I'll try that next time as I think that would be really good. I will also use even more garlic next time. And next time will be both soon and often.

Cuban Black Beans II

The flavor is good made exactly as written. It did take the beans longer than stated to be tender. I was afraid that maybe there would be too much salt and pepper, but that was not the case. If one used canned beans, it would be way too salty. A really good meatless dish.

Split Pea Soup

One does not need to soak split peas. It will save time not to do so and will not affect the recipe. This recipe is quite good.

Big Soft Ginger Cookies

These cookies are the bomb. When they first came out of the oven, they weren't our favorite. We stored them and they just got better and better... Followed the recipe exactly except used butter instead of margarine. Never use margarine because of trans fats.

Soft Oatmeal Cookies

Good recipe. I have found that I don't need to chill the dough. I don't flatten them either--just walnut size balls which flatten out some with baking. Really like them with chopped walnuts in them. Double the cinnamon and the vanilla. Be careful not to overbake. I baked half and watched them closely, taking them out while they were still soft. Mother made the other half. She flattened them, and let them bake until they were firm. These were still good, but only with dipping so as not to break a tooth.

Truly Delicious Brussels Sprouts

I had never thought of slicing brussel sprouts before. I don't care for whole, steamed brussel sprouts, but I loved these. The rest of the family including greatgrandma, grandpa, and my 8 year old who do love whole, steamed brussel sprouts did not care for these at all. So, 4 stars from me and 1 from the rest of the family. More brussel sprouts for me! I did promise everyone that I wouldn't make them again.

Creamed Spinach

Really good as written. Used fresh parmesan. Even better with onion added. The adults in this household liked it very much. The 7 year old tried one bite as agreed upon and decided that one bite was sufficient. The 2 year old wouldn't even try it, and I am not willing to argue about it.

Mom's Meat Loaf

This is the meat loaf of my childhood, similar to if not identical to that which was in "Better Homes and Gardens" which my mother received as a wedding gift in 1948 and uses to this day. This recipe is delicious as written; it is simple enough that I learned to prepare it as a 7 year old. It brings back memories of a time of my life which at the time seemed idyllic.

Greek Lemon Chicken Soup

This was fantastic--at least as good as that which i had in my favorite greek restaurant last week. i added an entire head of minced garlic and sauteed all the vegetables to tender in olive oil before adding all the other ingredients. i did not use the soup base as i don't have it and don't use it in order to decrease the Na+. the lemon and salt flavors were just perfect. I followed the advice of other reviewers and added the rice to individual bowls of soup. Also, used cornstarch instead of flour because my husband has gluten sensitivity. Use half the amount of cornstarch as you would flour. Always substitute butter for margarine to avoid TFAs. This soup is perfect.

Hungarian Mushroom Soup

this is a wonderful recipe--restaurant quality. added a splash of sherry after tasting it. otherwise no ingredient changes. used a stick blender to make it a chunky texture. my husband and mother loved it--the kids enjoyed helping to prepare it but wouldn't eat it.

Creamed Salmon on Toast

This is a great base recipe. I used olive oil instead of butter, cornstarch instead of flour (gluten intolerance), green beans instead of peas (didn't have peas). It was delicious. Everybody LOVED it. Thank you, Jacque, for sharing such a great recipe.

Curry Pumpkin Soup

This was excellent. My entire family loved it. I followed the recipee except for the inclusion of an onion and a clove of garlic. I used fat-free half and half and chicken broth instead of vegetable.
