Pam's Sugar Free Chocolate Pie

This is easy, tastes great and not so bad on the waistline. I also use two boxes cook and serve chocolate jello. Fills up the pie better. a smattering of mini chips adds a nice texture on the sugar free whipped topping. I used a Oreo shell.

Seafood Chowder

First sautéed the onion, carrots in oil, simmered all in chicken stock including the diced potatoes. When vegies were cooked, Then added the condensed soup and cream cheese, canned corn, drained. Used clam juice as others recommended, it added a nice briney flavor. I also added Zatarians creole seasoning, about 1 tsp. I added mixed seafood, mussels, shrimp, calamari and scallops. Excellent! Company good. Doubled the recipe. Photo attached.

Aztec Salsa

Great basic recipe. I used 1/2 jar of green salsa verde and omitted the vinegar and Italian seasoning and oil and added cilantro. Everyone raves about this salsa. So good!!

Strawberry and Spinach Salad with Honey Balsamic Vinaigrette

Loved it, was out of honey so used 5 splenda packets. I have made this many times and added grilled chicken, toasted almonds instead of the pecans. Tried nectarines and blueberries, All good! Great basic recipe that can be changed up with what's in your cupboard. Delicious!

Avocado Mango Salsa

Hummus III

As others have noted, great basic recipe. Tweak it as you like, I used three 15 oz cans garbanzo, two heaping teaspoons of Chinese chile paste, tahini, lemon, olive oil, omitted parsley. Next time I will use canned chipotle peppers or canned jalapeno peppers as I like my hummus with kick. Cost co was selling hummus and it was so expensive. This cost about $2.00 for 3 cups.

Baby Spinach Omelet

Fast, low carb, delicious. I thought I was tired of eggs, but this recipe changed my mind. My 13 year old son liked it too. I sautéed onions and wilted the spinach in a bit of butter and olive oil, and used it as he filling, omitted the nutmeg and onion powder, sprinkled the parmesan cheese, coarsely ground salt and pepper on top. Beautiful presentation, healthy, delicious. Thank you so very much!

Kettle Corn

Use a heavy pot and lid, follow the directions and keep shaking!! I skimped on the sugar and it did not come out as well. Cheap and easy and so much better for you than store bought if you are using canola oil.

Slow Cooker Pulled Pork

Teenager loved it! Very easy. The tenderloin part was a bit dry, so I agree with the other posters to use the shoulder instead. I would make this again.
