Easy Herb Roasted Turkey

Very, VERY moist turkey!!!! It was my first turkey attempt and my husband could not believe how moist it was! And the flavor was amazing! I used chicken broth instead of water in the roasting pan, added garlic cloves in the cavity, added 3 tbls of butter into the oil mixture and kept out the sage (because I didn't have any on hand). I rubbed the mixture on the skin. Next time I will try under the skin to see the difference. 10 lb turkey cooked in 3 hrs. I started it off covered with foil then uncovered for the last hour. I didn't bast the turkey once and it was great. It's a keeper!

Shoyu Chicken

Very good!!! I didn't grill though, instead I threw it all together in a pot and cooked it on my stove top until the chicken was ready, about 30 minutes.

Banana Crumb Muffins

Great muffin! Used whole wheat flour instead of white flour. Better if bananas are over ripe & adding vanilla extract makes a difference. Next time I will wait 5 - 10 minutes before the muffins are done to add the topping to prevent it from melting into the muffin. Good either way though! Keeper!

Soft Oatmeal Cookies

Very good & easy cookie!! I didn't freeze the dough, I just spoon dropped on the cookie sheet right after. I also didn't press flat with a fork and it came out chewy and a little crispy on the outside. Perfect! I have this saved for next time!

Pumpkin Oatmeal

Pretty good! I wasn't a fan of the honey in it so I used agave. Another day I wanted the sweetness of sugar, lol.. so I used a packet of Truvia. I can eat this everyday for breakfast!

Maple Glazed Chicken with Sweet Potatoes

I couldn't believe how yummy the maple syrup glaze was with the chicken. Who would've thought! For the sweet potatoes, I added butter, milk and a little maple syrup for a slightly sweeter taste and it was a perfect dinner! No complaints from my 3 & 4 year old either! Will be making this again soon!

Creamy Chicken with Broccoli and Red Pepper Pasta

Great simple recipe! I added more garlic, garlic salt, pepper and Emeril's original essence (to my liking) for more flavor. Without it, I think it would've been bland. I cut the broccoli and red peppers into little pieces to "disguise" it from my 3 & 4 year old and used whole wheat rotini, and they ate it up without a single complaint. I will definetly make this recipe again!
