Beth's Spicy Oatmeal Raisin Cookies

Made this twice for the kids at the daycare center. Went over really well. Used double the amount of margarine instead of shortening which I never use. Turned out nice and chewy with soft texture. Would make again, especially using dried cranberries.

Almond Tortoni

Made this for my mother since she enjoys this type of dessert. Turned out pretty well. Omitted the green cherries and doubled the amount of red ones. Nice garnished with raisins too.

Chocolate Gingerbread Cookies

Very good and tasty. This is the best recipe for gingerbread cookies I've seen so far. Substituted dark corn syrup for molasses and used cookie cutters to make gingerbread men. Will make again.

Butter Frosting

Just okay. I had to add extra milk to make icing more spreadable. Used on cookies instead of cake. Probaly will stick to powdered sugar frosting next time.

Gingerbread Boys

Delicious Pumpkin Bread

This recipe was great. I added double the amount of cinnamon and nutmeg and used chopped cranberries instead of nuts. The bread turned out very moist and delicious. Will make again.

Blueberry Bread I

This bread went over great at the daycare center where I work. I made a few modifications by adding more blueberries and using 25% less flour per serving. I also added larger amount of cinnamon into batter. I made a topping with butter, cinnamon, and sugar and sprinkled on bread right after I pulled from oven. Great bread recipe. I will make this again

Banana Cranberry Bread

This recipe was very good. The only thing I substituted was using 25% less flour and butter instead of shortening. I will surely make this again. This tops the list for cranberry bread recipes.

Taco Casserole

Cooked this recipe on two occasions. First was for the kids at my daycare center where I work and the second time was for my family. I would suggest using 25% more ground beef per serving since I ran out at end and had to use extra cheese for top layers. Also, the diced tomatoes are excellent and should be used with beef and onion when layering. Turned out very good second time around.

Cranberry Orange Loaf

Made this recipe for the daycare center kids where I work. Went over fairly well. I substituted fresh minced orange peel for the orange zest and added a little more orange juice since batter seemed a little thick. The density was very good and bread was moist. I would suggest using canned whole cranberry sauce in place of fresh cranberries for a more richer and sweeter taste. It also tastes better left in the refrigerator for a day or two. Overall good recipe.
