German Apple Pancake

A great weekend breakfast/brunch recipe. I do not have an ovenproof skillet, so what I did was saute the sliced apples, sugar, butter, cinnamon and nutmeg, then poured the mixture into a prepared 10" glass pie pan. I then poured the pancake mixture on top. Baked as noted in the recipe. The result delicious--and vanished quickly!

BBQ Dry Rub

This recipe is AWESOME! As I was mixing the ingredients together, I thought that this would also be a great recipe to make and put in a mason jar as a present for someone who enjoys cooking out on the grill.

Baked Penne with Italian Sausage

This was a big hit in our house last evening. Yummy! I didn't have white wine in the house when making the dish, and it STILL tasted great. I also used turkey sausage in the dish, to cut down on some fat.

Chicken Breasts Pierre

Fantastic! This recipe's a keeper! Easy enough for a family meal and special enough for dinner parties. It is so delicious with rice, salad and crusty bread. I did take the suggestion of using chicken broth (using 3/4 C.) instead of water. Also, as per the request of my husband, I flattened the chicken breasts out slightly prior to cooking.

Hash Brown Quiche

This is a great idea for when you don't want to or have time to make a traditional quiche crust and also if you like hash browns with eggs! We had ours with spinach (I used a half of a 10 oz. package of frozen spinach, thawed) and sauted mushrooms, instead of ham--a great main dish for Lent! I also followed the suggestion of 2 additional eggs, and baked for a slightly longer time.

Baked Corn I

This is such a delicious and easy recipe to prepare! I followed some suggestions of others and only used 1/2 cup margarine and light sour cream. I found that keeping it in the oven for at least 45-50 minutes worked out well, with the top just beginning to brown. I will definitely be making this again soon.

Nikki's Steak Saltimbocca

Great recipe! I couldn't find skirt steak at our grocery store, so I also substituted top sirloin steak (thin sliced). Tasty, epecially with the crispy sauted fresh sage on top.

Vanilla - Chocolate Powdered Sugar Frosting

Why buy store bought frosting when this recipe is sooooo good?! I made chocolate frosting with 3T. good quality cocoa (from Penzey's Spices) and half and half instead of milk. Use electric beaters to mix up the frosting and there should be no complaints about the consistency.

Bacon Cheddar Spread

Tasty! The creamy salad dressing I used was Ken's Light Creamy Parmesan. The only modification I made to this recipe was to give all the ingredients a good spin in the food processor before chilling. I will definitely be making this recipe again!

Artichoke Spinach Dip

Wow! What a great recipe! I also only used one container of sour cream and cream cheese. I also made the recipe earlier in the day, cooled it off, then placed the saucepan in the refrigerator. When our guests arrived, I just put the saucepan back onto the stove and warmed it up again. Rave reviews from everyone!

Cappuccino Mix

This is a an easy and quick gift idea. I also used a food processor to blend the ingredients together. By making a recipe and a half, I was able to fill a one quart wide mouth canning jar to the top. I covered the top with a fabric top and tied an ingredient card to the jar with a raffia ribbon.

Ham Broccoli Braid

Vegetable Cheese Soup I

Great recipe! I followed another suggestion and reduced the amount of water to 7 cups. In addition, I added 6 pieces of bacon, cooked and crumbled, to the soup when I added the sliced Velveeta. I'll be making this soup again!
