Black Bean and Corn Salad II

This is an excellent recipe! We ate it as a salad, but next time I may try it as a salsa with chips. And believe me, there will be a next time!

Easy Slow Cooker French Dip

BBQ Dry Rub

Easy Cheesy Potatoes

Great recipe! I cut the recipe down by a third since the full recipe would certainly feed a crowd. I used Yukon Gold potatoes sliced thin, and put all the ingredients (minus the butter) in the microwave for 5 minutes prior to cooking on the grill to guarantee that everything would be cooked through. Delicious.

Quick and Easy Mexican Chicken

Such an easy and delicious recipe. It's a keeper in our house! Also, depending on what type of salsa you get (mild, medium, hot), you can really control the "heat" factor of the meal.

David's Yellow Cake

I wanted to make a REAL birthday cake--and not from a box. This is the recipe! I've made this recipe twice, and it is so moist and delicious. I frosted the cake with a simple chocolate frosting of whipping cream, confectioners sugar, and cocoa. Just wonderful!

Easy Scalloped Potatoes

The ingredient listing looked good, but I'm in agreement with some others: this recipe needs MORE time to cook. I could not serve it with the dinner I prepared it with, and a couple days later I cooked it more, and it STILL wasn't cooked all the way through! Maybe the potato slices need to be sliced paper thin?

Chicken Breasts Pierre

Fantastic! This recipe's a keeper! Easy enough for a family meal and special enough for dinner parties. It is so delicious with rice, salad and crusty bread. I did take the suggestion of using chicken broth (using 3/4 C.) instead of water. Also, as per the request of my husband, I flattened the chicken breasts out slightly prior to cooking.

Chicken Enchiladas I

Delicious! I also used mild enchilada sauce instead of taco sauce, and shredded instead of cubed the cooked chicken. We will definitely have this again for dinner!

Cakes In A Cone

What a great idea! I made these for my daughter's kindergarten class for her class birthday treat(made the same day). I followed the suggestion of microwaving the chocolate chips to make the "frosting", as I found that easier than counting out chocolate chips and balancing them on a rounded cake top. As far as transporting them in the car, which is tricky, I was able to find a cardboard box JUST big enough to hold all the cones upright, so that none of them fell over while driving to the school.

Spinach Stuffed Chicken Breasts

This recipe is definitely a keeper! I also substituted the cream cheese for the mayo, and used basil and sun dried tomato feta cheese. My husband, who is not a big chicken fan, raved about the recipe over and over--and that is saying something!!

Wonderful! Upon reading the reviews, this looked like one of those recipes that is "better the next day". So I made it the day before we were to eat it, and heated it up the next day, along with making some mashed potatoes as a side dish. I also increased the amount of sauce, as per a previous suggestion, which worked out well.
