Sweet Herb Scramble

Reviewed: Mar. 15, 2003
I planned to prepare these for some weekend guests, and had to quickly toss them out and whip up some regular scrambled eggs in their place. The taste was fine, I suppose (although not preferable to just plain eggs, as far as I'm concerned), but as they were cooking, all those green herbs turned the otherwise beautiful yellow eggs the most unappetizing color of greyish-green I've ever seen. How embarrassing! No way I was serving that to visitors, so they were promptly tossed in the trash can.

Chocolate Cavity Maker Cake

Reviewed: Mar. 15, 2003
Absolutely beautiful, moist, rich and delicious. I topped it with the Satiny Chocolate Glaze - even better! When I offered a piece to some visiting family members, my sister-in-law, "That's a real cake? I thought it was a decoration!" I'll be making this many times in the future.

Spaghetti Carbonara II

Reviewed: Jan. 9, 2003
My husband and I devoured this carbonara. It's an easy weeknight dish. It didn't create the creamy sauce I had expected, though, so next time I may try adding a little cream to help bond things together a bit.

Baked Mashed Potatoes

Reviewed: Jan. 8, 2003
This recipe is so simple, but much more interesting and special than plain old potatoes. The cream cheese adds a sinfully rich creaminess, and the baking time gives you a beautifully browned top. Not too much trouble, but oh so good.

Sweet Green Bean Bundles

Reviewed: Jan. 6, 2003
The ultimate compliment: My GRANDMOTHER asked me for this recipe. I made this for a Christmas get-together and did it casserole-style (as described in a previous review) rather than wrapping all those little bundles of green beans. Everyone who thought they'd tried every green bean recipe was pleasantly surprised. I've been looking for a unique way to prepare green beans, and now I've found it. Thanks, Mark!

Beef Tenderloin With Roasted Shallots

Reviewed: Jan. 6, 2003
This recipe is too labor-intensive for weeknight dinner, but perfect for a special dinner party. The sauce was a little too strong for me, but others at the table gobbled it up. Definitely a tasty, juicy, and impressive main course.

Joy's Prizewinning Trifle

Reviewed: Jan. 6, 2003
My family couldn't get enough of this dessert. The entire trifle was gone by the next morning. And it certainly gets points for presentation - there's nothing quite like a pretty trifle for producing maximum wows with minimum effort.

Tiger Butter

Reviewed: Dec. 29, 2002
My husband is a big peanut butter and chocolate fan, so he flipped over this recipe. Better yet, everyone who tried it thought I'd spent all day in my kitchen making fudge... I refused to tell them I'd really only spent a few minutes melting chocolate chips in my microwave. This is VERY rich, so cut into small pieces and arrange on a pretty candy tray.

Irish Potato Candy

Reviewed: Dec. 29, 2002
This was a big hit in my holiday candy tins. Be sure to allow time for them to dry out a little so they won't be so squishy. Also, next time I'm going to roll them in cinnamon and a little sugar instead of just cinnamon. The cinnamon alone is slightly bitter when you first pop it into your mouth.

Almond Crunch

Reviewed: Dec. 29, 2002
Yum! This recipe has an addictive caramel-flavored crunch, and is an interesting alternative to peanut brittle. In fact, I like it better because it's crunchy without being too hard. To avoid burning (which is what I almost did on my first try), start out with your burner at a medium-low setting and increase the heat as needed to reach the right temperature.

Divinity

Reviewed: Dec. 22, 2002
This was just too easy, and so very good! My in-laws were so impressed with my candy-making skills - little did they know the hardest part of this recipe is watching your mixer work. Don't even try this if you don't have a candy thermometer, or if you don't have a patience to beat egg whites to stiff peaks... but if you've got the thermometer and the time, you'll be richly rewarded with a beautiful candy. Add red or green food coloring for Christmas!

French Green Beans

Reviewed: Dec. 1, 2002
The addition of the toasted almonds is key to making this an interesting and tasty green bean dish. I will add a little less rosemary next time - the taste of the dried version can be a little strong for the mild flavor of the beans.

Baked Ziti I

Reviewed: Dec. 1, 2002
This ziti is creamy and cheesy - just the way we like it! I make this at least once a week since the first time a tried it about a year ago. Easier than lasagna and tastes even better.

Margaret's Southern Chocolate Pie

Reviewed: Nov. 28, 2002
This recipe tasted fine, but my meringue was a total disaster! Everything that could possibly have gone wrong did - it shrank horribly, it was so wet underneath that it slid all over the chocolate filling, and it beaded up on top more than I've ever seen. I'll attribute part of this to lack of experience with meringues on my part, but I've also got to place a little blame on the vagueness of this recipe. When I later read the allrecipes.com article on making the perfect meringue, I learned about all sorts of meringue do-nots - and that I had done them all! Unless you're already a meringue-baking expert, you should probably save this recipe until you are.

Savory Turkey Gravy

Reviewed: Nov. 28, 2002
This gravy was really delicious and received many compliments, but it was only after much effort on my part to thicken it up. In addition to the recipe's flour mixture, I had to add two cornstarch slurries, and boiled for almost a half hour! I'm going to keep this one, but will have to work on getting it to my desired consistency.

Apple Pecan Cornbread Dressing

Reviewed: Nov. 28, 2002
I was very proud of myself when my husband (the stuffing connoisseur) gave this recipe his highest praises. It's moist and savory, and every other bite or so you'll get a wonderful sweet apple surprise. Very interesting in taste and texture - this one will show up on my table for many Thanksgivings to come.

Butterhorn Rolls

Reviewed: Nov. 28, 2002
I was attracted to this recipe because the description said "no kneading required" - and I was very pleased with the light, buttery rolls that this low maintenance recipe produced. This is perfect for people who want homemade yeast bread without the sweat. I ended up letting mine rise for almost 6 hours and I think they were even better and lighter because of it.

Cheesy Green Beans

Reviewed: Nov. 28, 2002
I couldn't get into this recipe. The bacon taste seemed to dominate the entire dish, although that could be attributed to the type of bacon I used. But the cheese sauce was most disappointing - I expected the mixture to be coated in the creamy sauce, but instead all the cheese settled at the bottom of the serving dish. I happened to mention that the recipe was called "Cheesy Green Beans" and my husband said, "They had cheese in them?" Won't be trying this again.

Gourmet Sweet Potato Classic

Reviewed: Nov. 28, 2002
I've tried a lot of sweet potato casseroles, and this is by far the best. No lumps, no strings, no greasiness - just a yummy sweet topping and smooth, creamy potatoes underneath. I found that the 35 minute baking time didn't quite do the trick, so I cut the potatoes into chunks and microwaved for 10 minutes (50% power) until softened. This will be my sweet potato recipe from now on.

Sauteed Apples

Reviewed: Nov. 28, 2002
These turned out beautifully and exactly as I expected - the cinnamon syrup-coated apples that I know and love from some of my favorite restaurants. But I found the cooking time to be way too short, perhaps because I used Granny Smith apples - I ended up having to cook them in the syrup for at least 10 minutes, and still they weren't quite softened all the way though. I will try this recipe again with a slightly sweeter and more tender variety.
