Brenda's Lasagna

Good quick and easy. I don't add any extra salt though. I also sub cottage cheese for ricotta, and sprinkle some parmesan on top. The addition of a little cheddar to lasagna is just really good for some reason! (If any of you haven't tried the "new" ready to use lasagna noodles do it soon-they work great and are sure a time saver-no more wet,hot,torn noodles for me)!

Chow Mein Clusters

I love this! especially because I always buy the big bag of chow mein noodles (cheaper that way) and they get stale if I just use them for Chinese food. Good way to use up some of the noodles!

Simple BBQ Ribs

Yummy! So much easier than trying to grill ribs and losing the sauce and burning them!! Searing the ribs in some oil locks in their flavor better than boiling them. You can then place them in the oven a little longer and on lower heat, or the crockpot on low for several hours. I like to add a little onion too, and used Hunt's Original BBQ sauce. Throw some potatoes in to bake along with them, or serve with potato salad and coleslaw for a deelicious hearty meal! Thanks Lloyd!

Banana Muffins II

Easy and quick! Follow the recipe as written and it won't fail. I adjusted the recipe to make 6 muffins and used 1 whole small egg (even though the adjusted recipe called for 1/2 of an egg)! it worked just fine with the whole egg. One could add 1/4 cup of chopped walnuts, and sprinkle with some sanding sugar (which I did) or whatever else you like, but when you add other things you are not really making THIS recipe.

Banana Cream Pie III

Wow, this is SO easy and SO good on a hot summer day.I prefer a pastry crust, but the ready made one in your grocer's dairy case work very well! Bananas will get brown if it hangs around too long....as if that would ever be a problem!

To Die For Blueberry Muffins

WOW! These have a wonderful flavor, are crammed with blueberries, and Colleen is right don't leave out the struesel topping it really makes these deelicious!! I cut the recipe in half because I only had a half cup of blueberries and they came out great!Made 6 BIG muffins. The grandchildren LOVED them too! We had scrambled eggs with ham and cheese mixed in and these muffins for a scrumptious and special midweek breakfast.

Bacon Cheeseburger Pasta

I call this "kid friendly" my grandchildren smiled, said MMMMMMM, and gobbled it up! Fun to use different pasta shapes bow ties, wheels etc.I just made it with bacon, hamburger, soup, pasta and mild cheddar cheese, no extras. try using Velveeta or American cheese, as they would melt better...cheddar is a bit stringy.

Vienna Schnitzel

I don't deep fry this. I brown them in about 3 Tb. oil and cook on low until done. Sometimes I remove it to a baking sheet and finish in the oven. Just to cut down on the fat intake and it works just as well. I have also pounded the pork cutlets, dipped in beaten egg, salt and pepper then just dip in finely ground saltine cracker crumbs delicious and easy!

Cabbage Roll Casserole

Very good! SO EASY! Thrifty and healthy! I made half a recipe and it filled a 9x13 pan. We have had three meals from it! Leftovers are just as tasty!We have cornbread or hot rolls with it. Hint:I used half of a small head of cabbage to equal 1 and 3/4 lbs. (I weighed it in my kitchen scale to be sure). You can jazz it up a little with seasonings you like, e.g. a few dashes of garlic powder, black pepper or whatever. I have used tomato soup if I didn't have tomato sauce on hand and it is good too.

Best Ever Muffins

Very good basic muffin recipe, they rose nicely and are very moist, not too sweet. I added two mashed bananas to this recipe, and thought it needed something to jazz it up, maybe some kind of spice like nutmeg or maybe part brown sugar and part white sugar.

Baked Pork Chops I

I have poured mushroom soup over pork chops before, but this is soooo much better! I used plain bread crumbs and added a half teaspoon of Italian herbs. I didn't have any white wine and it was wonderful anyway. Very tender and a good taste. I think it would be nice for company especially if you used well trimmed boneless pork cutlets. I am also going to try it with chicken breasts. Thanks!

Carol's Chicken Chili

We tried Cha cha's and Carols White Chicken Chili and they are both great! My husband is nuts about this soup!! We don't add jalapeno because of the little ones. You can adjust the chili's and other seasonings to suit your own taste. We did like to add a tsp. of sour cream, salsa and sprinkle with shredded Monterray Jack or cheddar cheese for presentation. (using hot salsa would give those who need the extra bite what they want too)!

Sweet Onion Burgers

Oh yeah! SO GOOD! My husband and I forgot about onion burgers, and now that the SWEET Vidalia and Walla Walla onions are in the store you have got to try these! He sometimes adds a bit of green bell pepper and worcestershire sauce to the mix. We have used regular white or yellow onions too, but we use less onion because the flavor is so strong.
