Old-Fashioned Potato Soup

This is a great basic potato soup, I too, add a couple of stalks of celery tops and all chopped. for variety, instead of making the flour roux I cooked the onion (I use half and onion) and celery in butter, then added the chicken broth, parsley and some pepper and cooked til potatoes were done and added a cup of cubed Velveeta, and some whole milk to bring it to the consistency I wanted. I don't add extra salt due to the salty broth and cheese. You also don't have to add thyme and carrots.

Tuscan Soup

I use red new or baby potatoes, scrubbed well with peelings left on sliced not cubed, and half and half not evaporated milk. Need to use SPICY Italian sausage and crumble it for best flavor in this soup. One could use Kale or Spinach.

Italian Sausage Tortellini Soup

Oh WOW! This is wonderful! I used mild Italian sausage,which was still kind of spicy- and I forgot the bell pepper and parmesan.I also used my regular dried parsley, and Italian Seasoning. You don't need any extra salt or pepper unless you're into lots of it. It is really yummy just as written. I would say to use 16 oz. of tortellini though, maybe because we like them! I used the frozen cheese tortellini, and I did thicken it a little with a Tb. of cornstarch mixed with a tsp. of water. Served with lots of crusty French bread and butter, Hubby ate two bowlsful!! We plan to serve this to our friends soon!!!!!!!!!!!!

Ham and Brie Sandwich

This is super yummy! Decadent! I think the key is to be patient and let the brie get gooey and hot. I make mine in a cast iron skillet like any grilled cheese. One may experiment with the preserves, amounts of ingredients etc. to suit individual tastes. I have even put a few very thinly sliced apples on mine in addition to everything else.

Reuben Sandwich I

A good alternative dinner for hot summers. I had to substitute mustard instead of Thousand Island and I used canned corned beef since that's what I had on the shelf and this is good too. I put the cheese on a slice of rye, then the sauerkraut (well drained) a squirt of mustard, then topped with the corned beef and the second slice of rye,(this helps keep the bread from becoming soggy) butter the outsides with margarine and pan grill. When I get to town I am going to get the Thousand Island and some Pastrami to try next time! Yummy and so easy with a big dill pickle and potato salad or even a tossed salad.

This is SO good! I like to use halved red and/or green seedless grapes or craisins in it too, and sometimes I leave out the bacon and onion. It's pretty versatile.

Authentic Louisiana Red Beans and Rice

We cut back on the hot spices a bit as the sausage is also spicy. I like to add some ham to my red beans and rice, and I cut the sausage into smaller pieces.

Polish Meat and Potatoes

Really good and so easy. I used Smoked Sausage. Go easy on the oil as some is rendered from the sausage. I like to give the potatoes a head start by microwaving them a minute or so before adding to the saute pan. We love this with creamed corn on the side just because that's how grandma served fried potatoes! I add a crispy lettuce salad and buttered Rye bread is good with it.

Praline Cake

Used a pudding in the mix good quality yellow cake mix, made as directed, 9x13 greased and floured pan baked for 35 min. Made frosting as directed in recipe seemed runny, poured on hot cake and returned to oven for 5 min. looked a little runny but had cooked up, was afraid to leave it longer so took it out, tasted very good, but leaving in oven 8-10 minutes would have made it carmelize. Should have done what the recipe said!I think it would be divine with some vanilla ice cream!

This is great - don't substitute the cheese for something else and don't try to freeze it - making ahead means you can wrap in cling wrap or foil and refrigerate it overnight for flavors to meld.

Black Beans and Rice

I had to come up with a vegen meal for a friend who was visitng and found this-I added diced red and green peppers, celery, finely minced onion, chili powder, less cumin, no cayenne, garlic powder, onion powder, black pepper, and a tsp. of fresh lime juice. Served with low fat whole wheat tortillas, salsa, sliced lime, lettuce and tomatoes. It was a hit. We now like it so much we make it often but eat on tortillas with lowfat cheddar cheese and low fat sour cream added-still very healthy and rice and beans are a cheap nutritios meal!

Easy Homemade Chili

Good as it is but I prefer to use "chili beans" which are pinto beans seasoned with chili flavoring already. You can use dry minced onion instead of fresh and it works too. I like to keep all the non-perishables on hand for a quick and easy meal anytime.

Buster Bar Dessert

I wanted to cut down the calories and size for the 2 of us; so used one ready-made Oreo crust and Hershey's fudge sauce and about half the amount of other ingredients. Easy and good! The ready made crust comes with a lid that you can invert and put on top which makes it so easy to store the dessert in the freezer or take to a dinner party!

Buster Bar Ice Cream Dessert

I used a ready - made Oreo chocolate crust and Hershey's Hot Fudge sauce-needed to cut other ingredients about in half to fit the 8" crust, but it cut down on the calories a little and sure is easy! The Oreo crust comes with a lid you can invert to store the dessert in the freezer or take to a friend.

Quick and Easy Tuna Casserole

Nice recipe as most of us have the ingredients on hand, or if you don't have noodles use macaroni, no cream of mushroom soup?.. you can use celery or chicken, if you dont have frozen peas you can use drained canned peas or leave them out, no American processed cheese substitute shredded cheddar or omit, no fresh onion use dried minced or powdered onion.
