Marshmallow Crispie Bars

I hadn't made MarshMallow Krispie Treats for ages, there wasn't a recipe on the box or bag, and I forgot my recipe so tried this, and it is much better than my old one! The Bars are really gooey, very good and stay fresh for days if stored in airtight containers.

Ortega® Fiesta Bake

This was ok, my family liked it. I thought it was too sweet. Maybe one should mix up ones own cornbread, being careful not to add too much sugar rather than using a pkg. cornbread mix. We served it upside down and topped it with sour cream and diced tomatoes etc.like a taco. It turned out very well.

Crunchies

This is a very easy, tasty bar. Not a lot to it. Be careful not to overbake. I used a 9x13 pan and the bars are quite thin. I didn't have golden syrup, so I used white syrup.

Homesteader Cornbread

Had to make this after seeing all the 5 star reviews and it is indeed very delicious! The batter was very runny when I poured it into the Pam-sprayed pan, but that is how it looks because it turned out just fine. Absolutely scrumptious hot with butter and honey!

Baked Ziti IV

My husband and daughter loved this dish.(She ate two helpings, and she watches her weight! It is Easy and good. The cheeses and sour cream soften the acidity often found in tomato saucey Italian dishes. I used a combination package of mozzarella and provelone "Pizza" cheese in the dairy case at the supermarket. I also mixed the cottage cheese and sour cream together.(Good way to use up those leftover dabs of sour cream and cottage cheese). Couldn't find fresh rosemary so used dried.

Salsa Chicken

Easy and delicious! I didn't grease my pan, no need to. Used chicken tenders. Made as written otherwise, and we loved it-I passed the recipe to my family and friends! I think one could leave out the taco seasoning as the salsa imparts lots of spicy/saltiness anyway. Sour cream adds that needed cool creaminess to round out the dish, I topped with sliced green onion and passed extra salsa too. We had Mexican rice and tossed salad with it.

Li'l Cheddar Meat Loaves

This meatloaf has a good flavor, but I think there is too much milk and not enough spices in the meat mixture. I couldn't even shape it into "loaves" it was too mushy.I thought about adding some bread crumbs but thought maybe the oatmeal would soak up some of the milk. I also had to bake it longer to get rid of some of the moisture. I think I will try it using bread and just a few Tablespoons of milk and some salt and pepper next time.

Chocolatetown Special Cake

VERY delicious! Buttery and rich! Use Buttermilk and follow the directions, also use REAL BUTTER for the shortening in the cake and Real Butter in the frosting for best results. I make it in a 9x13 pan, but bake it a little longer (maybe 5 minutes) and test with a toothpick.

Crispy Herb Baked Chicken

This is so good, and easy to alter the recipe to fit as many servings as you need. Also, you may add more spices (parsley flakes,pepper,Italian seasonings or whatever)- to taste. We like it with rice pilaf and a salad.

Joey's Peanut Butter Cookies

I used margarine and chunky peanut butter. The dough is so sticky I had to refrigerate it to roll into balls.It seemed like I really had to watch while they baked to make sure they didn't overcook. Maybe there is no need for the added milk? The taste was "off" and I can't figure out why. I guess I prefer a crunchy cookie and think I will go back to my mother's recipe. Sorry Joey.

Cheeseburger Soup I

Very good flavor, but if you like more substantial soups this is really lacking in meat and vegetables as written more like creamy broth with a few things floating in it, maybe it needed more cheese and thickener. Next time I will add 1 lb of ground beef, bigger slices of carrots and celery and more of them, and more potatoes!

Cuban Midnight Sandwich

Might not be a "real" Cuban Midnight Sandwich, but sure is tasty! Good way to use up hamburger buns! We cooked on the George Foreman(about 2 min.- preheated), Mixed 1/2 cup REAL mayonnaise and about 2 Tb. bottled zesty Italian dressing. Spread the mayo mixture on one side of the crusty roll, then topped with the cheese, turkey, dill pickle, and ham then spread the mustard on the side that touched the ham. When pressed and grilled, the outside gets slightly crusty and the middle is hot and melty. Yummm

Chicken Enchiladas II

This is so good and easy and can be made with lefttover pork or poultry but I prefer cream of chicken soup, and if you don't have green onions regular onion, dried onion, or onion powder works-green onion is best though! I add a little more garlic and onion powder too.

Cranberry Swirl Coffee Cake

This turns out great if you follow the recipe exactly-use a regular can of whole cranberry sauce mixed so it spreads easier- I used a lightly oiled and floured bundt pan, poured 1/2 of the batter in added all the cranberry sauce and topped it with the rest of the batter. I baked about 5 min less than it called for about 50 min. COOL 10 min. before turning out of bundt pan onto a serving plate. It doesn't need glaze but it would look nice to sprinkle it with powdered sugar or make a light glaze when it cools and is on a plate for serving.

Split Pea and Ham Soup I

I added two ribs of celery and one large carrot sliced thin, a bay leaf, a dash of hot pepper sauce,and a pinch of fines herbes.Good idea to wait on adding any salt until you taste at the end because some ham imparts enough salt. Good soup! We like it with cornbread or any crusty bread.
