Oatmeal Peanut Butter Bars

i don't know what i did wrong but mine was so dry it was not 'bars' it was more like granola. however i will try it again b/c it tasted amazing! i used cranberries & mini chips instead of the coconut, etc (just what i had at home). Can't wait to try again sometime, hopefully they will turn into bars next time.

Busy Day Chicken Rice Casserole

This turned out pretty good. I browned the chicken on both sides and seasoned it first, as well as sauteed some onions. The only real change i made was putting 2 cream mushroom instead of 1 cream celery b/c i didn't have it. I think seasoning the chicken well and browning it first makes it taste less bland.

Pork Chops for the Slow Cooker

this was pretty good! but it didn't make enough liquid to cover the chops so i added water & chicken stock. afterwards i reduced the liquid to make a sauce. i would like to try this again w/ chicken b/c i am just not a big porkchop person but it did turn out tender and everyone liked it.

Caramel Filled Chocolate Cookies

These cookies are SO good. I used Peanut Butter Kisses and they turned out great and didn't leak. YUM YUM YUM. I'm going to make some more right now! Oh, I guess I did back the temp down to 350 but my oven seems to be hot. So i did 8 mins in a 350 oven.

Peanut Butter Balls III

this was very good! i halved the recipe and it ended up not being enough peanut butter but i just added a little more and it was great. very quick and easy. kind of like a crunchy reese's.

Baklava

this is so easy and turns out great. everyone always thinks i got it at the store or as a gift or something when i make it. i usually use a mix of walnuts pecans and hazelnuts, and sometimes if i have enough, just add tons of nuts. however i have to up the sauce by a lot when i do that or else it's kind of dry. its fun to experiment, no matter what i do it's yummy.

Savory Garlic Marinated Steaks

this marinade turns out great everytime. it's a staple now. i almost always have all the ingredients for it and it works on veggies and other stuff too. it's great to throw together at the end but even better when you can let the meat marinate for a few hours.

Cherry Limeade I

I did not know what this was supposed to taste like but it was pretty good! I only wanted enough for 2 ppl so here's what I did: in my blender I added 2 cans Sprite, 1 mini container of frozen limeade, and about 1/4 jar of cherry juice, along w/ 2 cups of ice and blended. It was very good. I'm going to go by Sonic and see what there's is like and then maybe tweak the recipe a little. It would make a good punch for a party.

Cheese Corn Spoon Bread

This was really good! My husband also loved it. I used a sweet cornbread mix b/c that's they kind i usually use and it was great. I did not add cheese b/c i didn't have any and after eating it I don't think i would add cheese. Otherwise it's perfect the way it is, use a sweet cornbread mix for a yummy side dish! We had this w/ ribs.

Abby's Chicken Rollatini

Very Yummy! This recipe got rave reviews from my husband especially. I slightly altered it, First I used chicken cutlets so i didn't have to pound. (Need to make extra if you use them b/c they are smaller). I had a parmesan pesto olive oil from Williams Sonoma and I rubbed that all over the chicken first, then seasoned w/ garlic salt and added the garlic & parmesan cheese but not the butter. I laid a piece of prosciutto under the chicken as well as the layer on top w/ the cheese. Was a little tough to roll up but not too bad once i used 3 toothpicks. The olive oil and wine wasn't enough to cover the chicken so several times throughout I basted it with the mixture. It was very good, however I love prosciutto and so I mostly wanted to eat that, it was so much more flavorful compared to the chicken. I found it hard to cut through this. I would like to find a way to cook this without having the chicken rolled. Also, if the chicken were flat it could cook in the wine better. The chicken wouldn't have been very flavorful w/out the flavored oil and i think i would even add more seasoning next time. Overall it was yummy!

Oatmeal Toffee Cookies

These are very yummy and hit the spot after i was craving an atlanta bread company toffee/chocolate cookie (very close to these). However *Where do you buy the toffee bits?* I used werther's orginals and chopped them but that was a lot of work, and everyone mentions 'toffee bits' - did you buy these in a bag or chop them yourself? Just wondering, otherwise i love these! I didn't notice them falling apart.. maybe i got lucky?

Mouth-Watering Stuffed Mushrooms

These are WONDERFUL. I like to alternate these with substituting crushed stove top stuffing for the mushroom stems sometimes. VERY YUMMY!!! My husbands favorite. Cream cheese makes it awesome.

Peach Crisp III

This was good, company liked it. The peaches were pretty much on the bottom w/ this on top, did not incorporate at all. Guess that is how crisps are. I used canned peaches but would not recommend. you could tell, because the granola mixture did not interfere w/ peach taste or mix in w/ peaches. Which would be great w/ real peaches, i just wasn't able to use those. Might be better w/ apples!! Would still recommend this recipe.

Yum! i love this but i leave out the tomatoes. Goes wonderfully on Gyros. If you can get greek yogurt at a specialty store it is even better; you can leave out the sour cream altogether. With regular plain yogurt, follow recipe (add the sour cream). It seems some people don't understand this is not a salad or side dish, it goes on top of other things (gyros, curry chicken, etc) That is maybe why they didn't like it. It's not something you really would eat by itself.

I have made this about 3 or 4 times and have never had the dough cook all the way through before some of it started to get too done. The meat and seasonings are wonderful, so we have resorted to putting them in large greek pitas instead of the dough roll way here. i love that idea, just can't get it to work for me. i always use cucumbers instead of zucchini and use the recipe for Raita on this site to dip it in/top it with. Oh, i've only used lamb once, it's hard for me to find, pork works great too.

Buffalo Style Chicken Pizza

This was pretty good, although like others have said i prolly only used about 1/3 of the blue cheese. Next time i would leave out the blue cheese entirely and add more mozzerella like a regular pizza, and provide blue cheese on its own as a dipping sauce. If you do use the blue cheese, get low fat, you can not tell a difference in taste.

Smushed Apples and Sweet Potatoes

This is one of my favorite vegetables now! It's so yummy. The first time i made it, i had to mix apples sepately b/c they weren't as soft as sweet potatoes, but second time i cooked apples about 15-20 mins and then everything was easy enough to smash w/ a fork. You can also pour in casserole dish and add marshmallows like sweet potato casserole but we like it plain as it is just as good and healthy for you that way.

Chicken Pot Pie VI

This tasted pretty good, turned out well and i did follow directions except used only broccoli instead of mixed vegetables. We both liked it but did not have seconds as it seemed pretty fattening. Can't describe it really, just tasted like it was not super healthy. I did not look at nutrition info before making but a serving has 706 cals w/ 41 g fat. That is a little too much for me. Maybe using reduced fat everything, cheese, and soup, would help. But except for that, this was my first pot pie and it turned out well.
