Shrimp with Penne and Squash

Excellent light tasting pasta dish. Added 2 tsp. minced garlic to oil before adding zucchini. Also added diced onion and mushrooms. Very fresh tasting but not a whole lot of depth of flavor, so added some crushed red pepper for a little kick. Would experiment with adding a little white wine or additional herbs next time.

Spinach Minestrone

Delicious!! I let the vegetables and broth simmer for about 30 min before adding the noodles, and added a dash of garlic salt and basil. Great, simple recipe that tastes even better with more cooking time or the next day.

Tex-Mex Tilapia

Delicious use of tilapia!! Spicy, but very flavorful. Added extra lime juice during cooking and less olive oil to keep it low calorie.

Lasagna Alfredo Roll Ups

Absolutely wonderful! Made for a pot luck and got great reviews. Used a plain homemade alfredo sauce for the base, then topped with a store bought Sun-Dried tomato alfredo sauce. Make sure you dry out the noodles before rolling, and use a spatula to spread the cheese mixture.

Italian Sausage Soup

Delicious, hearty soup. Added one chopped onion to sausage and garlic. Also used 24 oz of boiling water, 3 tsp of beef bouillon and 4 oz red wine. Would recommend draining grease from sausage, as I thought the end soup was a little oily. Otherwise, very delicious and a filling meal. Topped with a little crushed red pepper for those who like it spicier.

Parsley-Stuffed Flank Steak

Good flavor, but definitely didn't need to bake for 1.5 hours. Took out after 1 hr 15 min and was well done. Added steak seasoning to the outside before wrapping.

Plum Clafouti

Absolutely fantastic! Used half vanilla extract and half almond extract, and only used 6 plums, but otherwise made exactly as specified. Served with whipped cream.

Easy Beef Stroganoff

Delicious for how easy it is! Made a few changes. Added 1 tsp minced garlic to the onion and mushrooms; used sliced sirloin steak instead of ground beef and added 1 tsp dijon mustard to the beef bouillon. Made the dish a little more flavorful and less Hamburger Helper-like.
