Chef John's Buttermilk Biscuits

Excellent Biscuits! Have made them a couple of times, once following the recipe to the letter. The 2nd time I made them I was a bit short on butter, so I substituted some sour cream in place of half the butter. They turned out delicious, light and fluffy as well! Can't go wrong with this recipe.

Napa Cabbage Salad

Very good...I would recommend adding a few drops of sesame oil and a tsp of ginger to the oil and vineger mix...I would also recommend using rice wine vineger.

Campbell's Kitchen Easy Beef Enchiladas

I much prefer corn tortillas for enchiladas, but you must heat them with a bit of butter first to soften them. I also prefer shredded sharp cheddar to the cheese soup. Instead of the taco seasoning, try it with a bit of the sauce and some cheese mixed with the meat.

Sue's Taco Salad

I have made something similar to this. You might consider trying this recipe with 1000 island dressing, its quite good! Very tasty. We would not pre-mix the meat, beans with the salad. Leftovers keep better if you keep the heated items seperate from the salad mix.
