Perfect Pumpkin Pie

I've been making this recipe for the past few years. The only changes I made to the recipe was using pumpkin spice mix and an extra dash of cinnamon, and sometimes I'll bake it in individual tart shells rather than one 9 inch pie crust. Everyone loves it. It's the perfect ratio of sweetness to pumpkin mixture.

Zucchini-Chocolate Chip Muffins

I'm giving this recipe 5 stars even though I changed the recipe around to make it healthier and lower in calories. I've been watching my weight and craving for sweets at the same time. I made the following changes: 1 cup whole wheat flour, 1/2 cup all purpose flour, 1/4 cup "I Can't Believe it's not Butter" (all I had at the time), 1/4 cup unsweetened applesauce, 1/4 cup almond milk (also all I had), omitted the walnuts because I'm not a nuts fan, and I completely forgot about the lemon juice. It still turned out amazing!!! Tasted great! I have no doubt that had I followed this recipe 100%, it would be absolutely amazing.

Janet's Rich Banana Bread

I finally found a banana bread recipe that came out moist! I wasn't fond of the idea of slicing bananas into the bread so I mashed them up. I also ended up using 4 bananas since my bananas were on the smaller scale. I omitted the walnuts because I don't like nuts and used half a cup of whole wheat flour instead since I was out of all purpose. The cooking time took a tad longer than 60 minutes and the top was browning a bit too much so I just covered it with tin foil and lowered the temperature to 325 for another 15 minutes. I brushed a simple sugar syrup onto the cake once it came out of the oven. I'll be coming back to this recipe for when my banana bread cravings kick in!

White Chocolate Macadamia Nut Cookies IV

I loved these cookies! I didn't change a thing. After the first batch came out, I decided to make a second batch but I was running too low on macadamia nuts so I just used the same cookie batter and added bacon and dark chocolate chips into it. I find that the cookies didn't spread at all when I put them onto the tray as balls, so I flattened the rest out with my hands. They taste just like the Subway cookies!!

Fluffy Pancakes

I had a random craving for pancakes, and I'm not usually a fan of eating pancakes. I'm more of a waffle person. I didn't have any lemons or vinegar in my house so I just made it without the acid. I also added a pinch of cinnamon and a teaspoon of vanilla and two teaspoons of condensed milk. These were so fluffy, I think I might start eating more pancakes just because of this recipe.

Basil Tomato Soup

Gave it a 4 star because I tweeked it to give it a lower fat content as I'm trying to lose weight. I didn't have whipping cream so I just used 1% milk. I used vine tomatoes and roasted it with some garlic cloves before following the rest of the directions. I used 3t of margarine instead of 1/2 cup and made a roux first. Some days, easy and comforting food is all it takes to turn a frown upside down.

Easiest, Most Delicious Meringue Buttercream

Yum! Finally found a buttercream that doesn't taste like sweetened butter! For those having troubles, you DO have to beat the egg whites for a long time. It appears soupy at first and even I was wondering if I screwed it up despite that tips. I kept on beating however and finally it stiffened up a bit. Then I put the butter in little by little and it curdled up a bit. I kept beating it as the tips said, and eventually it became buttercream consistency. I love it.

The pandesal didn't quite come out as I had hoped. I'm used to Aling Mary's sweet and soft (no crust) pandesal. This wasn't bad either, it makes a great breakfast and dinner bun, and I'll probably make it again. I added a whole cup of sugar just to get a little bit of sweetness to it.
