Cranberry Muffins

WONDERFUL recipe though I did make a couple teeny tiny changes: (1) I did not have nuts so I left them out but they were good all the same :). (2) I did not have oranges to zest so I left them out but they still had a strong citrus flavor so I may continue to leave it out in the future. (3) I added salt, even if you use salted butter/margarine/shortening/etc always add a dash of salt to boost the flavors. (4) I added a dash of molasses to the mix to add depth to the spices. I also left out the spread as they are just fine on their own or with butter. I made a giant batch of mini-muffins with recipe to snack on :D

Fluffy Pancakes

This pancake recipe is WONDERFUL!! Very tasty! I followed the recipe almost as is except I used mashed bananas instead of butter because that's just how I prefer mine.

Apple Spice Cake

I normally don't like to review a recipe until I can complete it almost exactly but I was super eager to make this cake and I had just ran out of butter and oil so I subbed an entire cup of applesauce instead. I also accidentally added an extra apple and used rum soaked raisins instead of water soaked. I also used a reviewer's advice and subbed half the sugar for brown sugar. My end result? A SUPER moist cake that is more like a bread pudding than an actual cake but the taste is out of this world! I noticed giant apple chunks in some of the photos but I would advise against that, I say pieces slightly bigger than peas will yield the best results.

Heavenly Chipped Chocolate and Hazelnut Cheesecake

This recipe is WONDERFUL! Unfortunately I had to make a couple substitutions because my local grocers carried neither hazelnuts or hazelnut liquor. I used walnuts and hazelnut flavoring syrup. I added a dash of the syrup to the crust to help the walnuts pretend to be hazelnuts lol. After making this recipe and reading the reviews about people who changed the crust, I can't see why. The only problem I had with the crust was it's somewhat dryness but I loved the chocolate/'nilla wafer blend, it looked beautiful and tasted great, I think people who leave out the chocolate or use cookies instead will just end up with a rather sucky crust. My only recommendation for people using this recipe is to make sure the chocolate chips you mix in the actual cheesecake itself are finely chopped in a blender. The parts of my cake that didn't get much chocolate from the coarse chop, didn't have much flavor compared to the parts that did so it was kind of unbalanced. I would add a little tiny bit of cocoa powder to the mix to help evenly distribute the chocolatey flavor.

Orange Spice Cake

Just by tasting the unmodified batter I can tell this is a great spice cake recipe! I did modify my batter though. Since the only thing I like topping my spice cakes is powdered sugar and a couple reviewers note that you can't taste any orange until you glaze it with the marmalade (a fact I agree with after tasting the batter), I added the zest of one orange to the batter as well as it's juice as part of the 1/2 cup and it was AMAZING!! It tasted just like you would expect orange spice to taste like from it's smell, YUM!! I also added a bit of salt to bring out the sweetness and flavor a little more but I added it after tasting the unmodified batter which was fine without.

Soft Chocolate Cookies

I want to give these cookies a full five stars but mine didn't come out quite right. There was no way I was going to eat 33 cookies by my lonesome so I used this website's calculator to scale the recipe for 16 cookies. Following that recipe exactly, my cookie dough turned into brownie batter. Way too soft and liquidy for even refrigeration to make firm. I had to keep adding sugar and flour a table spoon at a time to make the dough stiffer and it took about five until I could work with it. Plus, I had too grease my baking sheet because the cookies were sticking. But, even though I had to alter and adjust, the end product came out fantastic! The cookies were like circular brownies and tasted WONDERFUL! But I can't tell if this is how they would have come out with a perfect recipe or as a product of my fixes.

Chewy Chocolate Cookies

I'm sad to give this recipe only 3 stars. They are pretty tasty but following this recipe exactly as is leads to some pretty fail cookies. The dough was somewhat dry and crumbly, the cookies did not flatten on their own (which is weird since that is what other reviewers complained about), they actually stuck to my non-greased non-stick cookie sheet, after baking for nearly 15 min and allowing to cool completely they were extremely soft and delicate, they had an oily/greasy feel to them, and they had a gritty texture. I've made many cookies in the past, so I have a good bit of experience, and the more changes I noted I will have to make, the more I disliked this recipe. If I ever make this recipe again, it will only be in small batches for my own personal satisfaction and chocolate fix since these cookies are not presentable for special gatherings and occasions.
