About this Cook
I am almost 50 years old, and a married mom of two teenagers, one boy and one girl. I work full-time as an Employment Counselor. I like cooking, but love to bake...breads, cakes, cookies, desserts, pies, you name it. It never seems like I have enough time to actually prepare the beautiful meals and desserts that float around in my imagination, but once in awhile, I pull a rabbit out of my hat and impress my family with some new dish or dessert.
My favorite things to cook
I love to bake desserts, pies, cakes, cookies. It's fun to take on more challenging recipes, such as souffles, homemade pies/pie crusts, puff pastry desserts, phyllo dough recipes, pastry cream, custards, etc. I aspire to bake like some of the pastry chefs featured on the Food Network, but I have a LONG, long way to go! The journey is fun though and provides a LOT of laughs (and weird samplings) for my family. I DO make a beautifully flaky pie crust though. My husband asks for my homemade pies as birthday and Christmas gifts! I once enrolled him in the Pie-of-the-Month club, courtesy of my own kitchen.
My favorite family cooking traditions
My Mom makes the BEST baked beans from scratch. She also makes a great potato salad. During Christmas, we do A LOT of baking. For Thanksgiving, it is my job to bring the pies every year.
My cooking triumphs
I do a great job with pastry cream, homemade pie crusts, and some nice layer cakes. I would have to say that my triumphs have revolved around making my kids' birthday cakes - not so much as they've gotten older, but I used to create some elaborate birthday cakes when they were younger.
My cooking tragedies
Usually, I have a tragedy when I'm trying to make a "healthy" dessert. It's hard to find a really tasty health dessert, and I've prepared some real clunkers.

Judy's Strawberry Pretzel Salad
One of my favorites for summer, although I wouldn't classify it as a salad. It seems more like a dessert to me.

Pink Stuff
Decadent and luscious. If you're thinking "healthy salad," move on. This is a dessert, and a doggone fine one at that.

Easy Sugar Cookies
I added about 1/2 tsp. almond extract and reduced the baking time to about 8 1/2 minutes. They were good, however, I will keep searching. They were had a lightly buttery-crisp edge, which was wonderful, BUT they were a little too dense in the center. I would like to find a recipe that's still soft-centered, but with a lighter and more velvety center. My coworker thinks the key might be a recipe with sour cream, so I'll keep searching and testing.
