Mom's Zucchini Bread
Delicious! My zucchini hating 6 year old loved it & asked for "more, more!". I added an extra cup of zucchini and did 1/2 brown sugar, 1/2 white just because, but those were the only things I changed and not necessary at all. I had to bake for 1 hour to get it fully cooked---I started checking at 40 minutes. I'll definitely be making this again!

Authentic Thai Coconut Soup
My husband and I made this last night and agreed it was the best soup we've ever had and definitely the best we've ever made ourselves! We used ginger instead of galangal, zest of 1 lime instead of lime leaves,only about 4 ounces of mushrooms,red curry paste instead of curry powder, and we added rice noodles. The only thing we'll do differently next time is add about 1 more teaspoon of the red curry paste for just a little more zing. It was delicious and we're having it again tonight.

Whole Wheat Honey Bread
Love this recipe & so does my whole family including my finicky 2 year old. I made some adjustments and substituted dry GOAT'S milk for the regular milk and coconut oil for the shortening and it turned out great. I also added the wet ingredients first, but included the salt with that as others indicated. I heated up the water until almost boiling before adding it to the machine, and that seemed to do the trick getting the yeast to rise because it did so nicely. I used the Basic and Light settings on the bread machine and it turned out a beautiful golden brown on the outside while tender on the inside. I really wouldn't change anything other than possibly more honey if you want a sweeter more dessert-like bread.
