Pesto Chicken Florentine

Yummy! Everyone liked it, including my 20-month old and 4 1/2 year old. I probably more than doubled it with 2 6-oz. bags of spinach (had to wilt it in batches) and instead of alfredo sauce, I used a 1.3 oz. packet of Knorr's Parma Rosa. I also did bowtie pasta. I will definitely make again.

Swiss Chicken Casserole II

I thought it was great and used a few reviewers' comments to make it scrumptious--used cream of mushroom soup, sprinkled chicken with garlic powder, and threw in as much broccoli that would fit. Next time I'll use the crockpot and loads more broccoli!

Spinach and Carrot Quiche

This was great even though I made a few changes--I used about 1/2 cup of frozen onions and didn't saute them and instead of 2 pie shells I used a 9x13 pan and made a potato flake/butter "quiche crust" I use quite often. This was great for a vegetarian dinner but I can see how it'd be great for brunch!

Tater-Dipped Eggplant

I tried some peeled and unpeeled and liked the unpeeled ones better. Overall very good although the microwaved leftovers tasted better the next day--more time for the flakes to get mushy I guess! It sure is hard to get clumpy mashed potato flakes off your fingers!!

Spicy Crusted Swordfish With Citrus-Walnut Sauce

Great dish for my dad's 61st birthday dinner! I added a little more cinnamon becaue the cumin made the rub smell a little spicy; I also only had plain breadcrumbs so I added a pinch of basil and oregano to make them Italian. The orange/walnut/honey sauce was awesome (I used raisins instead of currants) but the couscous was just ok.

Fast and Friendly Meatballs

These were pretty good!! I did add a small chopped onion and a combination of rosemary, basil, oregano, and garlic powder since my breadcrumbs were plain. I only had 1 lb. of ground turkey so my meatballs did cook a little faster, maybe just 10 minutes and then turn would make it better. I did simmer them in marinara sauce while I boiled some penne pasta and it was very very good! I have no problem trying them again and again!! :)

Barbeque Halibut Steaks

I only used 1 Tbsp. butter but added another 1 Tbsp. of garlic. I used George to grill the steaks for about 10 minutes and it was very good! If I let it sit longer in the sauce it would've been a little better.

Honey Lime Tilapia

My mom made this recipe but didn't double the sauce so it didn't have a strong flavor; she did add mushrooms (and omitted the other vegetables) to the marinade and those were superb! We also left out the cheese.
