I live in San Antonio, Tx with my husband and 2 toy poodles. Our 2 children are grown and we are fortunate they both live in San Antonio. We have 1 very cute grandson, thanks to our daughter.
My favorite things to cook
Lately I've been into healthy cooking and have been experimenting with different ways to cut fat and calories from old standards. I enjoy the challenge of coming up with new ways to accomplish this without giving up flavor.
My favorite family cooking traditions
Christmas cookies! Every year my mom would make tons of cookies, despite working a full time job. I remember her staying up late at night baking. As a child, it was my job to chop nuts, make sure the raisins had no stems on them and strategically place half an almond on every Sand Tart, brush with egg white, then sprinkle each one with cinnamon and sugar. Her cookies were wonderful and a sight to behold. She would fix boxes up and give them to friends. I have carried on this tradition. It wouldn't be Christmas without tons of cookies.
My cooking triumphs
I would have to say my spaghetti sauce and lasagna, only because my husband says I make the best he ever ate. I have to give credit to my brother for the spaghetti sauce, as he gave me the recipe years ago.
My cooking tragedies
When first married I wanted to make stuffed pork chops. I asked my mom how to make stuffing. She told me how to do it but repeated many times, "I add a lot of pepper". The outcome was a tragedy. I added so much pepper to the stuffing we couldn't eat dinner. We still laugh about it to this day.

Bangin' Banana Bread
This Banana Bread "IS" Bangin'. I have made it twice and it has taken the place of any I have made in the past. Followed the recipe as written, except I had no macadamia nuts. First time I used Walnuts, second time Pecans. I don't think it would matter what kind of nuts you used, it is delicious. So moist, flavorful and yummy!

The Best Meatballs
Love this recipe. Have made it many times. However, my husband and I are now making an effort to eat less beef. Today I made this recipe with ground white turkey. Gotta say I was skeptical, but they were delicious. Just sprayed a non-stick skillet with olive oil and browned them before adding to sauce. Delicious!

Health Nut Blueberry Muffins
Made these last week with blueberries. Didn't have oat bran so I increased the quick cooking oats and wheat germ to 1/3 cup each. By far the best tasting heathy muffin ever. This morning I made them with cranberries. Wonderful!
