Tortilla Filled with Lunchmeat

Quick & easy. Easy to vary (must try herbed cream cheese, sliced turkey, red pepper strips & baby greens). For lunch at home we also like these with sliced or shredded hard cheeses, nuked to melt the cheese. If served cold, tortilla is optional b/c you can spread the cream cheese on the sliced meat (pat dry with paper towel first) & roll up. Both ways are good sliced into pinwheels for party food.

Banana Peanut Butter Bread

Excellent. As suggested by previous reviewers I add vanilla, extra pb, and extra bananas. Also usually bake as muffins, 20 - 25 minutes. My kids love them, always a hit.

Twenty Minute Buns

Excellent recipe. Mine turned out just a little heavier than I was expecting, but I think that may be because my bread machine (on dough setting) worked the dough longer than the time called for in the recipe. Or else I used too much flour and got it a little too stiff. Even still the rolls had a great texture and taste, a special treat with grilled burgers -- a 5 star recipe for sure.

Pecan Jam

Tasty, unique, and successful. To avoid a grainy sugary mess, cook until sugar is dissolved and ingredients are well combined, as indicated in the recipe. To avoid making toffee...well...don't let it boil, as indicated in the recipe, and especially not to hard crack stage, which any seasoned candy maker will tell you is the only way possible to turn sugar into hard candy. I would have given this only 4 stars because I did find it a little too spicy (and I love spicy stuff), but I thought an extra star was in order to help balance poor reviews from reviewers who could not possibly have followed the recipe to a tee considering their stated end results.

Authentic Louisiana Red Beans and Rice

Cajun-country reviewer here to say this is about as authentic as it gets, though technically a Cajun home cook doesn't use recipes or measurements. According to Louisiana tradition this would be served on a Monday -- supposedly an easy meal for laundry day because of the simmering time -- accompanied by sweet, plain, or cracklin' cornbread and a glass of iced sweet tea. Practically speaking, it's a tasty & inexpensive any-day meal. Oh, and, andouille is a cajun sausage made in Louisiana & pretty common in southeastern grocery stores; elsewhere, you might be able to find it in specialty stores or else ask if the manager of your grocery store can order it.

Snack Crackers

Very good, very easy. Three year old liked them. I used 1/3 cup oil total - half canola and half olive - and added freshly ground mixed peppercorns. Next time I think I might use 1/4 cup olive oil & 1/4 cup canola, and double up on the ranch mix for even more flavor.

Carnation® Caramel Sauce

Turned out great, really good with vanilla ice cream, bread pudding (what I originally made it for), and just about anything else. Can vary flavors by using different extracts (I used rum flavoring for the sauce I put over bread pudding). -- 11/26/03 - Came back to edit because I've always made this recipe with Eagle brand; tried it today with Nestle and ended up with a slightly powdery texture that detracts from an otherwise tasty caramel sauce.

Great cake doughnut recipe. Fries up almost perfectly round, except for little points left from dropping the batter with a spoon - looks a little funny, but tastes great considering how easy it is. Highly recommend.

Homemade Vanilla Pudding

I used half & half instead of milk. I like my pudding rich and thick (spoiled by store-bought, I guess), so when it was thick enough to coat the back of a spoon I let it cool a bit, then whisked in 2 egg yolks and continued cooking & stirring until it was thick enough that it divided to show a streak of the bottom of the pot when stirred. Was great, exactly what I was craving. Would make a good pie filling too.

A good & easy crackle top cookie. Moist with a blondie-like texture when warm, a little like a shortbread cookie when cool. Rolling the cookies a little larger or else baking them a minute or two less seems to yield more moist cookies, but they'll be less likely to crackle; might want to experiment a little to find a good balance.
