Vegetarian Meatloaf

My husband and I loved this....I used ketchup instead of BBQ sauce, and the Parm cheese. Will make it again and again!

Classic Peanut Butter Cookies

These stayed moist for as long as the cookies lasted (about 1 week). The dough was so sticky...and the cookies were flat. BUT - Hubby said the cookies were yummy and addictive :) I guess that's a good thing!

Zucchini Cornbread Casserole

This was ok - we think it could use a little more zip...but, that might just be personal preference as we like things a little zingy. A good way to dress up a zucchini. If I make this again, I'll have to think of how to give it some pep to suit our taste :)

Chicken Cordon Bleu I

Oh, this was fantastic! Just some notes about how I prepared it --- I used honey ham (which gave it a nice little kick of taste), and instead of sprinkling bread crumbs on the chicken, I rolled mine in bread crumbs. Great dish!

Gourmet Chicken Pizza

Chicken and Ham Lasagna

Fabulous!! What a great combination of flavors. I did use spinach instead of broccoli (personal preference), pre-sliced ham (the texture seemed more appropriate than cubes!) as well as the oven-ready lasagna noodles and it was wonderful. The mushrooms were a nice touch, too! A HIT with my husband. Will make this again -- and I see this as something I would make and bring to a potluck or family dinner.

Three-Layer Chocolate Brownies

These were so good! The oat crust coupled with the traditional brownie and the sweet frosting was such a unique treat. While we love brownies, this was a nice twist on a favorite. Rich but not too sweet. Will make these again! I used a semi-sweet chocolate square in the icing because it's what I had handy.

Black and White Pudding Squares

This was good...simple, easy and falls under the "how could you not like this?" category. Very traditional tasting and I think it would appeal to most everyone (I'm thinking this would be a nice summer dessert)....BUT, lacked the WOW factor. But that's OK...sometimes GOOD is good enough. By the way - my hubby loved it and I enjoyed a nice chunk!

Grandmas Bogie's Parmesan Chicken

So yummy! Chicken was very tender. And, I didn't use all the spices the recipe called for (I don't typically keep those on hand), but did use Italian bread crumbs. I served over whole wheat spaghetti, and then made a sauce with Italian chopped tomatoes and tomato paste (Italian herb flavor).

Haddock Bubbly Bake

This was simply fantastic! So easy and SO SO SO delicious! I served it with peas and roasted potatoes...but mashed potatoes would be wonderful, too. I used 2 cans of mushroom soup (instead of one), and I got this wonderful sauce (that tasted fantastic over the potatoes and peas!!) I only used 3/4 of an onion because it seemed like enough at the time - but now wish I had used more, as they were a nice addition (even my husband, who isn't a big fan of lots of onion, even remarked on how he enjoyed the onions). Also - I made this in a large baking dish, so I had a single layer of fish on the bottom. Not sure if that matters. This gets HIGH marks with us!

Pineapple Bars

True "from scratch" taste. Very good. Takes some effort - and plenty of ingredients - but worth it if you want a taste that doesn't seem like it came from a mix. I would be proud to serve this. The crust was almost cake-like and you could taste the oatmeal, which I enjoyed.

Scalloped Potatoes and Hamburger

Not so good. Lacked flavor - that's my biggest "issue". I sprinkled a little cheese on top, but it should be "standard" with this recipe. It could have used more onions and meat, too. Just not liking this. Won't make it again.

Ground Beef Stew

This was so tasty and it smelled wonderful! I didn't expect it to be so savory. Reminded me of my mom's homemade vegetable soup a bit. I used ground turkey instead of beef, and I added a can of tomato sauce to give it some thickness and color (it really didn't need it but...). I didn't have all the spices on hand so I used just the dry onion soup, garlic and I added an onion. The spiceyness was just perfect...and my hubby agrees, which is great because he enjoys food with a little zip, but not too hot! I'll make this again.

What a HIT! I know my husband loves a dish when he says "You can make this any time!" And he said just that -- over and over! The only change I made was using ground turkey instead of beef. Hubby said this reminded him of lasagna. mmmm

Golden Broccoli Bake

This was good, but I added a packet of the dry Knorr vegetable dip to the mash potatoes so they weren't bland. It was very good! Also, I used ground turkey and browned it with an onion.

Sugar Cookies VI

Not crazy over these. A tad on the bland side (not a nice sugary sugar cookie). Also the dough was SOOO STICKY!! The did bake up nice.....
