Fresh Broccoli Salad

This salad is similar to one my Mother used to make. I have been living overseas for a few months and wanted to bring something different to a BBQ than the Germans normally eat. I ended up writing out the recipe 5 times and it was the only salad that was gone by the end of the bbq! It's delicious with a great combo of crunchy textures and the sugar and raisins add the right amount of sweetness. Don't change a thing, make this recipe as is!

Easter Lemon Bread

I gave this 4 stars because I wanted a more lemony flavour. It is a great cake mix. I made it a second time and took out 6Tbs of the 1c of milk and added lemon juice in its place. I also used 1c of whole wheat flour & 2c all purpose and reduced the sugar to just under 2 cups. It was super moist and really lemony, just the way I like it.

Blackberry Muffins

Had loads of fresh blackberries from the farm last night so I made these before I went to bed so they'd be there for breakfast. When I took them out of the oven it was all I could do to let them cool for 10 minutes before I had to sample one! They are moist and delicious. The only changes I made were to use half whole wheat flour (I do this in most of my baking) and I added about 1/8c more milk to compensate for this. I didn't have pumpkin pie spice so I used 1/8 tsp. cinnamon and 1/8 nutmeg. They turned out awesome. I took some down to my landlady, her Mother and Brother in Law this morning and they loved them! I will make them again as I have 4 baggies of berries in the freezer measured out specifically for this recipe!

Tender Potato Biscuits

These were great. I added some stuff to cater to my tastes. I cooked up some bacon bits and added them once they cooled, also dried chives, and dried onion flakes. We ate them with poached eggs, it was an all in one meal.

Brooke's Best Bombshell Brownies

I made these last night and they are the best homemade brownies I ever had. I made my own white chocolate cream cheese icing to top them. I followed the recipe except I did the half brown sugar and half white substitution. Excellent, thanks Brooke!

Easy Morning Glory Muffins

I thought this was a great recipe. I followed some of the other reviews and used all WW flour. I subbed approx. 1/2c yogurt, 3/8 applesauce and 1/8 oil for 1c oil (I took a cup, poured the last of my applesauce in, dumped a bunch of yogurt and filled the last little bit with oil) and used 1c brown sugar instead of white sugar. Everything else was as the original recipe was written. These are moist and delicious and healthy! Thanks, this is a keeper.

Coconut Bread

I just made this last night and it is fabulous! I made the adjustments from one reviewer using buttermilk instead of regular, adding an extra egg and halving the baking powder. It turned out moist and delicious! I will make this again maybe adding chocolate chips or raisins.

Savory Garlic Marinated Steaks

This is a great marinade! I didn't have any liquid smoke (haven't been able to find it in small town Germany grocery stores) and it was still delicious! Great on the grill or in the pan.

Chicken and Biscuit Casserole

OK... I made this recipe, which was a lot of work but totally worth it. We ended up eating it for 3 nights in a row until it was gone. I had to make a few adjustments based on what I had available. I seasoned (garlic salt, fresh pepper, rosemary and basil)and baked 4 dark chicken quarters. I used celery root and leeks and a frozen peas n' carrots mix. Instead of using a buttermilk baking mix I made the wholewheat biscuits from this site and added rosemary as well as basil to the biscuits. It was delicious! I will be making again and soon! Thanks for a great recipe.

Whole Wheat Biscuits

I made these biscuits to top the chicken and biscuit casserole recipe from this web site. The other recipe calls for a mix but I wanted something healthier. It was a perfect recipe. I doubled it and added dried rosemary and basil to the dough to match the flavours of the casserole. They were light, sweet and savoury with the addition of the herbs! I will use this recipe any time I need biscuits. I'm sure you can jazz them up with whatever spices you like or make the recipe as is.

Honey Baked Chicken II

We really loved this recipe. I tripled the curry powder because I love curry and like a little extra spice. I made the sauce when my man brought home the wrong kind of chicken (thin, schnitzel strips) so I marinaded it for an hour and sauteed it in the pan. It was delicious. I have also baked it using turkey and chicken breasts and loved it every time!

Coconut Rum Balls

I am not a fan of rum balls but I made these as a gift for my landlady this christmas. She begged for the recipe as everyone that came to visit her ate them up. I did half the batch rolled in sugar and the other half dipped in chocolate. They were a hit in her house and my boyfriend loved them too!

Cornbread Pancakes

I really liked these pancakes. I made them for my boyfriend and he wasn't the biggest fan but I love cornmeal way more than he does. I also eat them without syrup, just some butter or honey and it's just like having cornbread for breakfast.

Orange Oatmeal Muffins

I just made these muffins yesterday and I think they might be my new favourite! I read some of the reviews and made a few minor adjustments. 1) zested and juiced 3 large oranges, used juice to soak oats (almost 1c filled rest of cup with boiling water) add zest to batter for more orangey flavour 2) 1/2 whole wheat flour, 1/2 all purpose, 3) 1/4c butter, 1/4c applesauce 4) used only 1/2c brown sugar, just eliminated white altogether 5) added about 1/8 and a splash extra milk to make up for the whole wheat flour (the first time I made them they were dry, this makes them super moist) 6)used dried whole cranberries instead of raisins. These were delicious, they are almost gone already. I will make them over and over again, and have shared the recipe with the couple of people I shared the muffins with. They loved them too! Thanks Doreen for a great recipe!
