Make Ahead French Toast

Used French Baguette. Used 9x13 pyrextype pan in insulated carrier. Extra mixture, so poured over bread before placing in Fridge. Ended up baking 55 minutes; til knife came out clean. Covered with pecan pieces& brown sugar. Several people at pot luck did not like the nuts. So I would just cover half with nuts, so there would not be so much waste.

Artichoke Chicken

Made this last night. One large breast was enough for the two of us. Served it with steamed veggies and toasted asiago bread. Subbed Greek yogurt for the mayo and used marinated artichokes. Had no garlic pepper so used pepper and garlic powder. It was declared company worthy. The chicken was tender and juicy with a nice tang from the artichoke spread. Planning to slice a breast and serve it on toasted bread as a sandwich today.

California Grilled Veggie Sandwich

Oh My! It was better than I imagined. Added balsamic vinegar to the basting oil. Used a vidalia onion and cholmondleys bread from Graeter's because that is what we had. Grilled on the panini press. Served as a closed sandwich. Can't wait to have it again.

Insanely Easy Vegetarian Chili

What a great recipe and it only gets better. We took suggestions from others: adding a can of black beans, 2 T cocoa powder, a can of italian diced tomatoes and a can of fat free refried beans. Also tossed in some left over peas. The refried beans and cocoa gave it a smooth, rich, smokey sauce and all the veggies made for a colorful and yummy chili. Served with a dash of lemon juice, dashes of hot sauce, a dollop of low fat sour cream and corn muffins. Thanks to Tia for her great recipe.

Lentil Soup

Good the first time. Better the next time after time in the freezer and with Tabasco Sauce splashed on top. Yummy! Served with toasted slices of fresh rye bread. Easy to make. Will go onto our regular rotation list. Thanks Marie for posting your recipe.

French Onion Green Bean Casserole

A big hit. I used quartered onions which tasted fine, but was more difficult to caramelize evenly and spread evenly? The texture of the larger onion pieces was a good balance to the beans, though some bites had more onion than others (which was more interesting to me). I was liberal with cayenne, which we all liked: it showed up as the last layer of taste in my mouth. 4 minutes of blanching the beans resulted in the beans being slightly crunchy, which we liked.

We make a double-decker with microwaved center cut bacon, on 3 slices of toasted Pepperidge Farm thin white bread. Add thick slices of tomato, spinach or lettuce, mayo for me and Miracle Whip for DH. Heaven.

Cole Slaw Dressing

Grilled Peaches

Wonderful. Had Balsamic Glaze so cut some steps. Had small Farmer's Market peaches, so 2 whole peaches apiece. Just a touch of glaze needed and just a small sprinkling of blue cheese freshly crumbled. Grilled inside, served with chicken, apple, craisins and pecans on bed of greens, with pomegranate dressing (courtesy of Wendy's). YUM!

Joe's Special Scramble

Enjoyed this version of Joe's Special with nutmeg and poached eggs instead of scrambled. Didn't have any mushrooms. Used oregano from the garden and a 12 oz bag of frozen spinach (unthawed) to 1 lb ground beef and 3 eggs. Will definitely make again.

Chef John's Baked Eggs

We double the recipe and make this in a 7 by 11 glass dish and place it between us. Using Cholmondley's English Muffin bread, toasted, we mop up every last drop. So tasty. Thanks, Chef John. Another hit!

Asparagus Frittata

Fast and flavorful. One pan cooking so not much clean up. I used 4 eggs, 3/4 c aged cheddar, Italian parsley, & sweet onion. Baked at 450 for 2 minutes, highest heat allowed for the pan I was using.
